How do I set up a multiple facetime accounts with 1 shared iCloud account.  I have 2 ipad mini's, 2 ipad2, and 1 iphone5.

Use a separate Apple ID for FaceTime on each person's device(s).  Go to Settings>FaceTime, tap the ID, sign out, then sign back in with a separate ID.  You can leave your iCloud settings the way they are.

    Multiple phones share one Icloud account. We use it to schedule jobs and crew leaders read the cloud to get the information of the job that needs to be done. However, we recently had a change of leadership and we think this person might have logged into or put our cloud on his phone to sabotage our business. I changed the password but that didn't fix the situation. I could put a job on the cloud with an old phone that was logged in with the old password and everyone with the new password would still see the job. I have since created a whole new cloud account which seems to have eliminated the "future" issue of sabotage however I would like to completely eliminate that old account...any advise?

    Everyone needs to go to Settings (or System Preferences)>iCloud and click 'Delete account' or 'Sign out' as applicable (it's the same thing). Then they can sign into the new account you have created and proceed from there. You can't actually delete the old account from the server but you can just ignore it.

    To begin with, I would like to try to explain Apple's confusing nomenclature in regard to iCloud.
    Apple have called the whole cloud thing iCloud, there are a number of features under the iCloud umbrella, some of which require their own login. iTunes is one of these, another is what Apple have unfortunately also called iCloud too.
    You can use the same Apple ID (account) to login to both iCloud and iTunes, but you don't need to and often users will login to each service using a different ID.
    The part that you need to remember is that the services available when you log into iCloud are completely different and unrelated to those when you log in to iTunes. Your iCloud login enables mail, contacts, calendars, find my phone, Back to My Mac, Documents & Data sharing and photostream, it does not affect any of your iTunes services.
    To avoid confusion when discussing your problem, when I mention iCloud, I am referring to the services under the iCloud login, Whereas I will refer to the whole cloud thing as The Cloud.
    So the answer to your question, is essentially not necessarily. However generally speaking, it is considered a good idea to have separate iCloud accounts.

    An iTunes account is something you log into online to buy music.
    An iTunes library is a collection of media and other items (including apps) on your computer.  This is what you see when you open iTunes.
    So, do you mean account or library?  You can set up a new iTunes account but all your purchases made in that account will remain in the old account and cannot be moved.  You can set up a new library by starting iTunes and immediately hold down the option key.

    If they are greyed out then usually this means that the account is not validated on that device.  The Delete Account button at the bottom should still work and allow you to remove the current account form the iCloud Section of Settings.
    To answer your question, yes.  There are four places you can use an Apple ID on an iOS device:
    Settings > iCloud
    Settings > Messages
    Settings > FaceTime
    Settings > iTunes & App Stores
    The iTunes & App Stores is the only one you want to use a shared (family) Apple ID account.  The other three you will want a unique Apple ID for that person to prevent info merging or messages getting shared, etc.

    To migrate her device to a new account, start by saving any photo stream photos she wants to keep to her amera roll (unless already there) by opening your my photo stream album, tapping Select, tapping the photos, tap the share icon (box with upward facing arrow, then tapping Save to Camera Roll.  If she is syncing notes with iCloud, you'll need to open each of the notes and email them to her so she can later copy and paste the text into new notes created in her new account.  Then go to Settings>iCloud, tap Delete Account (which only deletes it from this device, not from iCloud), choose Keep on My iDevice and provide the password to turn off Find My iPhone.  Then sign back in with a different Apple ID to create her new account and choose Merge to upload the data.
    Once you are on separate accounts you can each go to icloud.com from a computer and delete the other person's data from your account.

    I think Apple should be a bit more cautionary about iCloud and privacy.  My family shares the same iCloud account as we all enjoy the music we collectively purchase on iTunes; we paid Apple for this feature with some kind of grouped account.  We didn't know, however that this joins our devices so that iMessages, contacts, pictures and just about everything else is shared too.  The unprivate default seems to be to share everything between all devices vs. to allow access by exception or by choice (or by password?).  Sure, when my kids get all my texts I can go figure out why and fix it but that is in my mind the antithesis of privacy and could be quite embarrassing for any family.  I guess it is good for stalking the kids or parents though if they don't know about the partyline approach to privacy.  Maybe a tech solution would be to have the iPhone show somehow the extent of its audience to its user.

    No argument from me about the vagaries of using and sharing Apple IDs.  This can lead to unintended consequences, especially in a family situation.
    If you're sharing the same ID for FaceTime, you might want to go to Settings>FaceTime, tap the ID, sign out, then sign in with separate IDs there too.  Otherwise, you'll end up getting each other's FaceTime calls.

    I can tell you how to do this but first wanted to be sure that's what you want to do.  You would then be sharing the same iCloud account and any synced data (contacts, calendars, etc.) would then be merged and the merge data would appear on her phone and your iPad (i.e., you'll end up with each other's contacts on your phone). You would also both be backing up your devices to the same account, sharing the 5GB of free storage (assuming you're both backing up to iCloud).
    There's an alternative setup that would allow her to set up your iCloud account on her phone as her primary account and just turn on photo stream in that account (allowing your to share you photo stream), then set up a secondary iCloud account on her phone that would sync her Mail, Notes, Contacts, Calendars and Reminders.  She would still have to back up her phone to your account, as well as syncing Safari, Documents and Find My iPhone (all of which can only be done in the primary account).  Also, her mail would be fetch, not push as push email is only supported in the primary account.
    I suppose a third option is to leave things as they are and share you photos with each other using shared photo streams.
    Let me know what you want to do and I'll give you the steps.

I was advised by AT&T back in January that it would be necessary to setup separate iTunes accts for the second and third iPhones in order to receive system updates.     You said 2 iPads using the same iCloud acoount, are you try to switch to another iCloud account?
    Then you need to delete the one you have on iPad. Deleting iPad iCloud account do not delete the content in iCloud. You will be asked.
