I have two Facebook accounts. when trying to set up in lightroom it always connects me to my personal account. How do I get the option to select access to the second account?

It is possible to use multiple ID's on an iOS device, but when you switch ID's and download content with another ID, you associate the device with that ID for 90 days and lock yourself out of the other ID for that 90 day period.

You can set up separate iCloud accounts for each of you and sign into your account on both your iPhone and iPad.
To change the account on her phone, go to Settings>iCloud and tap Delete Account, choose Keep on My iPhone when prompted. (This only deletes the account from her phone; not from iCloud.) Then sign in with a different ID to create her new account (and use this ID for iMessage and FaceTime too). After setting up the account on her phone, she can then sign in with the same ID on her iPad to sync iCloud data between her devices.
You can then sign into you iCloud account using your ID on your devices, and both of you can continue to share the same ID in Settings>iTunes & App Stores.

I have an address that I use in two different counties. How do I set up two iTunes accounts; one for each country.

iTunes accounts are not designed to be used in multiple countries. It affects a few people but probably makes it simpler for Apple given the complexities of international copyright.
You would have to set up a separate account for each country with a different AppleID. Each account would have to have separate credit card information for a CC issued in that country, with a physical address in each country. If you do this, remember that items purchased under one AppleID are not transferable to another. Then too you will have issues with authorizing your computer for downloads (a 90 day wait period for changing authorizations). There's a host of issues with having purchases scattered between multiple accounts.
You can change country for a particular account, again once every 90 days if I recall correctly. However, that has its own set of issues which people have encountered when trying to do something such as update an app that is only available in the other country.
You could likely make it work 90% but it won't be simple.
Technically you are not supposed to use an account while out of the country. People seem to get away with it but Apple can do things to stop you. E.g., "The iTunes Service is available to you only in the United States, its territories, and possessions. You agree not to use or attempt to use the iTunes Service from outside these locations. Hi Rosdy, to get the most out of iCloud it is recommended that you use the same account between devices. Thus whenever you buy something on your phone it becomes accessible from your laptop regardless of whether your synced it over usb or not. *

You would each need to use your own user account on the Mac, you can do this at system preferences > users & groups.

Welcome to the Apple community.
You can add more than one account to your iPad, but you can only have one primary account. Secondary accounts which you can add at settings> mail, contacts, calendars do not have all the features of a primary account such as photo stream.

A second user account is separate; with separate preferences and data, but can share the same apps as long as they're in the top-level Applications folder, not an Applications folder inside another user's home folder.
Sharing files is a bit different; you can put them in the special Shared user folder, or grant permission to specific files/folders in one account to a different user.
