How do I stop itunes from also deleting music from my iphone or ipad when I delete it on itunes on my macbook pro?

I noticed that when I delete music or a movie from my macbook pro's itunes, the minute I connect the iphone or ipad, it automaticly removes the song from the devices. I am new to Mac so I am not sure how to prevent this from occuring. I know that when I was using my Windows PC to sync my devices, on the PC's itunes I could set it up to where I would be able to add or delete music to the devised manually without this worry. If anyone can offer me some help, I would appreciate it! Thanks!

    Ok, new to this, sorry for long title, thought I was in text/message part. I have two iPhones, and iPad, and a MacBook Pro. Invoking messaging and receiving on two iPhones and an iPad was cute in the beginning but now it's beyond useful. i've solved the problem on iPhones just by turning off messaging, but find nothing in settings to turn off messaging on the MacBook Pro. I'm assuming that turning off messaging on my phones reverts to SMS tho' not sure what Apple uses if not SMS.
    I do not want iPhone messages being received on my MacBook Pro. How do I de-authorize, can't seem to find anything in settings and don't want to delete MESSAGE.APP  as who knows if I want it in future.

    The iOS Messages app send either iMessages or SMS depending on the receiver.
    If it is Off then you can't send SMS either.
    Turn Messages back On in the iPhone.
    Go to Setting > Messages > Send and Receive and delete the Apple ID (And any other email) you listed for iMessages
    You will get a warning alert that the ID will be deleted across all devices (and it included Messages on the Mac)
    The Messages app on the Mac can have iMessages turned Off.
    Two ways to do this.
    Simplest is to go to  Messages Menu > Preferences > Accounts and Untick the Enable this Account Box.
    The second is to use the Sign Out Button (in OS X 10.8.2 which has updated Messages to version 7.0.1)
    The Second logs you out and removes the Apple ID from the iMessages Account settings.

    as Larry said, just a caution about the App Store Preferences:
    If you do not want your software to update automatically, disable "Install app updates".  But better not disable the option "Install system data files and security updates".  If there are security updates available, it is important to get them installed asap.

    I recently got a new laptop and today I downloaded iTunes onto it. I have to latest version of everything (4.3.2).
    I plugged my iPhone 4 into the laptop and everything downloaded well and everything is fine. iTunes recognises I have 779 songs on my phone and all the apps and videos and things. However, iTunes does not allow me to see these songs in iTunes itself. Under the 'Playlist' heading, it only says 'iTunes DJ, 90s music, Classical Music' etc that are default playlists.
    When I go onto the music page of my iPhone under 'Devices', I have to option to 'Sync music', but this then brings the capacity bar right down to hardly anything, so if I were to apply the changes, it would delete all of my current songs on the iPhone.
    I've looked everywhere and I don't know how to solve to problem. Please help!

    In regards to iTunes content, an iPhone can be synced or manually managed with music and video with an iTunes library on a single computer only. When transferring iTunes content from another computer, all iTunes content on the iPhone that was transferred from a different computer will be erased from the iPhone first. The same applies to photos transferred from a computer.
    To avoid this, you need to transfer your iTunes library from your old computer to your new computer following the instructions included with this link.

    Thanks whatheck, that worked!  I confirm that my antivirus (ESET Smart Security) was interfeering:
    I disabled ESET and synched - it worked!
    Then I also backed it up manually, and that worked also (30 seconds).
    Then I re-enabled Eset and backed up again... it still worked...
    BUT then I Synched again, and it failed!  Had to kill iTunes and the applemobiledeviceservice with taskmgr.
    So I turned off realtime file system protection in Eset, and after restarting iTunes (with 3gs still connected), Itunes said "Verifying PaulW's iPhone" for a couple minutes. 
    - Then it synched fine (couple minutes at most - got a new podcast). 
    - Then I backed up again manually which worked (10 seconds!).
    - Then I synched again, no problem.
    Note that AppleMobileDeviceService.exe is still using 50% cpu when sitting there doing nothing, even with iphone not connected.  Have to kill it manually (in task manager - processes) or cpu fan runs constantly.
    FYI: my ESET is a couple weeks out of date (subscription expired) will have to update it...

    If they are in the camera roll on the iPhone then deleting on the Mac will ahve no effect on them - if they are in your PhotoStream and you delete form PhotoStream on teh Mac they will be deleted from PS everywhere - if they are in an event on the Mac then deleting has not effect on yoru iphone

    Everything that you have checked in your icloud settings will be shared between devices using the same Apple ID.  If you don't want icloud to share that information, then simply turn off that process under settings > icloud

    You should take the time to familiarize yourself with the documentation that is available.  You can "uncheck" a song in iTunes, and then do a manual update.

    If you don't want to delete too much then you can do it directly on the iPad. You can either swipe across track names and you should get a delete button, or on the album or artist selection screens you can press and hold an album or artist and you should then get an 'x' on its top corner which will delete the album or artist if you tap it.
    If you want to delete more then it may be quicker to connect the iPad to your computer, and on the left-hand side of your computer's iTunes under the iPad device you should see a Music section (if you don't see the content types listed then click the arrow next to the iPad's name) - select that and on the right-hand side you should see a list of the music that is on your iPad, and you can then select and delete them.
