How do I switch from an exchange account to using icloud?

My partner and I each have iphones and ipads set up with google as an exchange account so that we can invite each other to events and keep everything (mail, calendar, contacts) synced to our devices.
We would like to switch to icloud, and I have some questions.
1. Can we continue to use our gmail accounts on icloud, or do we have to set up new email addresses?
2. Will we still be able to invite each other to events and get confirmations of same?
3. How do we do this?
4. If it doesn't work after we've tried it, can we re-setup our old exchange account?

You can continue to use your Gmail account if you wish, but it will not be within iCloud. You can create an iCloud email and use it if you want, however you don't have to.
Yes, you can invite each other to your appointments and confirm them.
Settings > iCloud, use the "create Apple ID" button to set up your iCloud account.
Yes, you can go back to using Gmail for your contacts, calendars etc, if you do not like iCloud.

What do you mean the ones "unique" to your phone? If you were not syncing them with something, they are gone. They are only part of the backup to preserve the list of favorite numbers and recent calls.
Don't worry about having to restore the previous OS. You can not do so at all.

You have to select between the two accounts in the mail app.
Say for instance that you are reading an email in your XYZ email account. Tap the button in the upper left corner of the mail app to back out all the way to where you can see all of the email accounts.... Tap InBox, then tap XYZ email Account and that will take you back to the main MailBoxes window.
Is that what you want to know? There is no way to simply "toggle" between the two accounts.

On my old pc, that running XP, itunes would continue playing when I was switching from one user account to another.
Now I have a new PC running win8 and the music stops playing when I switch from one user account to another. I think Itunes is still running on the user that is not active, but the music is not coming out of the speekers.

This sounds as if when you migrated from MobileMe, instead of signing in with your MobileMe email address you created a new iCloud account separately. If you want to make use of the data in what was your MobileMe account you have to sign in with it.
You can't merge the accounts, but you having signed in with one in System Preferences>iCloud you can sign in with another, to become the 'secondary account', in System Preferences>Mail, Contacts and Calendars. You can access email and sync Calendars and Contacts here alongside the primary account: mail will not be 'pushed' but checked at intervals, and you cannot use PhotoStream.

Contacts imported from a different email address? Are you referring to a different address book, possibly from your computer? Exchange contacts are not stored on your computer. If you turn off Exchange contacts they will disappear from the phone. The phone will always show contacts that are stored on your phone, and keep them separate from the Exchange contacts like they are now. If you delete the ones on the phone and then turn off or lose access to the Exchange account, you will no longer have any contacts.
