How do I temporarily delete apps to clear space for travel?

I have iphone 5 with ios 7. I want to empty my phone of most everything so that I have enough room to take photos and video when I travel.
What is the best way to do this and then be able to restore my phone when I return?

Settings>General>Usage...look here for what's taking up the most space...you can also delete stuff here...swipe left-to-right across the app...hit delete.
You can re-download purchased apps for free, or just sync them back to your phone. If you backup BEFORE deleting on your phone, you can then restore the app data, by restoring your phone from that backup, when you get back.

but they will forever be tied to your appleID so you can redownload them for free there is no way around that but they are not taking up storage or anything when they live in purchase

You can't permanently delete any items from your purchase history, but you should be able to hide them from the Purchased tab via your computer's iTunes : http://support.apple.com/kb/HT4919
If your iPad is on iOS 7 then after hiding them on your computer you may need to log out of your account on your iPad by tapping on your id in Settings > iTunes & App Store and then log back in for them to be hidden from the Purchased tab

Sorry. We can't help you. It's no longer an iPhone. Apple won't touch it.
Take it to whoever replaced the screen and see if they can help you.
iPhones are not user servicable and Apple does not sell iPhone parts at all. I'd be surprised if you were actually able to back it up at this point. It sounds like it's completely borked.

You can delete them from your computer's iTunes and/or from your device, but you can't currently permanently delete them from your purchase history, all you can do is hide them so that they are less visible : hiding and unhiding (the ability to hide items directly on a device doesn't appear to work in iOS 6)

Up front, I'd like to say that this question has nothing to do with storage space - rather, it's about deleting apps, for parenting reasons, the iCloud.
We wish to permanently remove select apps from our child's iPad. We cant seem to do this - while they are not active on the home screen, by going into itunes or the App Store, they can simply be downloaded again without our knowledge or consent.
Are there any provisions for parental controls over the iCloud?

By going to settings - general - restrictions - parental controls can be setup to limit the age appropriate content including apps. By hiding those apps on your computer you may be able to change their visibility as well, but I haven't had a chance to check it - try it yourself if you want.

Im trying to sync my ipod from my computer. I have too much music and apps and I get an error message saying I have to delete a certain amount of space.
