How do I turn off MAIL application as DEFAULT ?

Can anyone suggest how I can TURN OFF the MAIL application from opening as an automatic default whenever I click on "contact us" on a web page, so that MAIL does NOT automatically open ? I prefer nothing to open automatically ! If anything I'd like a dialog box asking me what application I want to use.
WHY ? Because I have great problems with MAIL, after a disastrous failed installation (and removal) of Safari 4 in 2009. Since then Safari works fine but I never use MAIL as when I do it crashes my whole system every time so I ignore it totally. However, when a web site's link "more info" triggers MAIL to open, I am lead down the merry and frustrating (!!!) path of having to recover from a crash. I'd like to avoid this once and for ever. Any ideas ?

Niel, That's exactly what I want to do: change or turn off the default email client so MAIL (apple's mail program) does not open by default. But I can't find a way of doing that, certainly not in "system preferences". I used spotlight to find "RCDefaultApp" and nothing exists by that name, or RC Default et al...

    It's the normal behaviour by design for all software in the Windows environment so there's no on-off toggle.

    Does anyone know how to turn off the animated opening of a "compose new mail" window when in fullscreen mode?
    I'm using Mail 6.5 under Mountain Lion.  When I'm in fullscreen mode and I either compose a new email, or reply to an email, the new mail window springs up from the bottom of the screen in an animated way.  I would prefer it to just appear.
    I was able to disable this animation when not in fullscreen mode by typing from a Terminal prompt:
    defaults write com.apple.mail DisableReplyAnimations -bool TRUE
    However, I cannot find a way to disable it while I'm in fullscreen mode.

    The only gesture that is stand is the two finger tap the goes to mission control.  You can turn that off in System Preferences > mouse.
    Also check the second column in System Preferences > Mission control > Show Desktop:
    Set to "-" as a secondary click here could cause the issue.

    If your referring to the Mail.app then you just dont have to have it running unless you want to check mail.   What do you mean by it interupts things?   I am using the mail app and when I get new mail the only thing is it puts a 1 in the dock icon.

    I already went to System Preferences > Notifications and set Mail Alert Style to "none" and also unchecking notification center, badge app icon and sound options.
    Despite taking these steps, the mail icon in my dock displays a "new email" light and dings whenever I receive a new email.
    I don't want these things to happen because they are distracting to my productivity.

    go to the mail app and go to the Mail>preferences and it should open up this tab
    On the line where it says "New Message Sound" make sure it says "none"
         - this will cure your audible "tap on your sholder"
    On the line where it says "Dock Unread Count" make sure it says "none" also.
         - this will make the red badge in your dock go away
    Where is says "Check for New Message" I would not turn that to manual or the computer wont get new messages and you will have to fetch new mail yourself under the mail app "Mail>Get New Mail" and when you are in your mailbox you probably want to see your mail at that time. So leave the Check for new message on.

    It might help knowing that Apple uses the term "Versions" instead of AutoSave. I have not yet found how to turn it off, but in the meantime, here's how to delete "Previous Versions":
    Do one of the following:
    If you have unsaved changes in a document, choose File > Revert To, and then click Previous Save.
    Hold the pointer to the right of the document title, click the downward-facing arrow, and then choose Browse All Versions from the pop-up menu.
    Click a gray tick mark along the timeline on the right to display various versions of your document.

    To restore your document to the state of a particular version, display that version, and then click Restore.
    To delete the displayed older version, hold the pointer to the right of its title, click the downward-facing arrow, and then choose Delete This Version. To delete all older versions, press the Option key while holding the pointer to the right of the older version’s title, click the arrow, and then choose Delete Old Versions.
    To create a new untitled document that duplicates a particular version, display the version, press the Option key, and then click “Restore a Copy.”
    To leave your document in its current state, click Done.

    An app will only run in the background if it is designed to run. Most are not. If it is a music app, pause the music before using the home button; if it is a navigation app, cancel the navigation before using the home button; etc.

    Choose Apple menu > System Preferences, click Security & Privacy, and then click General. 
    Open the General pane of Security & Privacy preferences
    2.     Select “Require password...NEVER after sleep or screen saver begins.”  You can adjust the amount of delay before a password is required in the pop-up menu.
    From what I am aware, you cannot turn off the keychain.

    Usually Escape would make me exit the text box
    Is there any chance you mis-remember? The Keynote shortcut for exiting text editing and selecting the text box is ⌘↩ (command-return).
