How do I uninstall iOS 7 in all my Apple products?

This is the most frustrating operating system to date.
iOS6 had great features and very easy to use. Apple
products were fun to use. Not the case any longer on
iOS7. My Apple products on iOS7 have become a frustration,
and should not be the case. iOS7 is not a Jobs mindset.
If Apple products become too frustrating to use, then customer
won't. They will switch products. I'm not happy!!!

Sounds like at least two different things are happening to you at once here.
Steps for dealing with the "network resource" message, follow:
(1) Download the Windows Installer CleanUp utility installer file (msicuu2.exe) from the following Major Geeks page (use one of the links under the "DOWNLOAD LOCATIONS" thingy on the Major Geeks page):

(2) Doubleclick the msicuu2.exe file and follow the prompts to install the Windows Installer CleanUp utility. (If you're on a Windows Vista or Windows 7 system and you get a Code 800A0046 error message when doubleclicking the msicuu2.exe file, try instead right-clicking on the msicuu2.exe file and selecting "Run as administrator".)
(3) In your Start menu click All Programs and then click Windows Install Clean Up. The Windows Installer CleanUp utility window appears, listing software that is currently installed on your computer.
(4) In the list of programs that appears in CleanUp, select any iTunes entries and click "Remove", as per the following screenshot:
(5) Quit out of CleanUp, restart the PC and try another iTunes install. Does it go through properly this time?

I'm sorry, but Apple does not provide a downgrade path for iOS. Because downgrading is unsupported by Apple we cannot discuss it on these forums, but you can use Google to find information on how to install an older version of iOS on any iDevice.

So, after it charged and was still plugged in, I deleted the Exchange account and then reset it holding down the sleep wake buttons until the apple logo appeared. I also changed the limit on my emails to 3 days instead of 1 week. It turned on, so I turned it off and let it charge overnight. So I'm selecting Accept to see what happens. I'm very discouraged, I need my phone to be reliable for my work. It's all rather odd because the old account cannot 'no longer exist' - if you don't have the correct password you won't be able to get into it, but you can't actually delete an iCloud account from the server.
I'm afraid you will need the services of iCloud Support. If you currently happen to have AppleCare, either because you recently bought Apple hardware or have paid to extend the inititial period, you can contact them here:

If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 6.1. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

The answer to this kind of depends on what you both want to do. Apple IDs can be used for multiple Apple services. For example you could both have your own iCloud Apple IDs (which I would suggest), but have only one iTunes Store Apple ID.
So think about how you will each use the iPhones then make your decision. Keep in mind that if you both use the same iCloud Apple ID you will receive each other's texts and emails and all the email, contacts and calendars will be the same.

You should always make sure that you put all of your music on your computer. From there you can sync it to whatever device you like

I have the same problem - it is maddening. I rely on this iPad for work so this is not just an annoyance! The above solutions of changing the appleid on the device or on the website do not work.
The old email address no longer exists - I haven't used it in a year probably and I no longer have the account. I logged into the appleid website and there is no trace of the old email address so there is nothing that can be deleted or changed there. On the iPad there is no trace of the old email address so nothing can be deleted there either. I have updated the iPad software and the same problem comes right back. Every 2 seconds I am asked to log in using the old non-existent email. The device is currently useless.
The only recent change to anything was the addition of an Apple TV device, which was set up using the correct login and password.
Does anyone have any ideas? The iPad has been backed up to the iCloud so presumably it now won't recognize the current iCloud account? So restoring may notbe an option?

They don't expire. As far as anyone knows Apple IDs live on forever - if you forgot its password use https://iforgot.apple.com. Good luck with the answers to whatever security questions it asks.

Right! That's the reason you do not create a new Apple ID.
As far as Apple is concerned a new Apple ID is a completely different user, with absolutely, positively no access to anything available to any other Apple ID.
Concentrate your efforts on resetting the password to your old Apple ID. It has not expired, and is the only way to use all your existing iTunes purchases, App Store purchases, computer authorizations... etc. Forget about the new Apple ID you just created.
