how do I update my Apple ID that is saved in my iphone to my new ID i just created? It is always prepopulated with my previous appleid and won't allow me to enter anything except a password.

Welcome to the Apple Community.
Firstly, you need to change your details with Apple, Start here, change your country if necessary and go to manage your account.
In order to change your Apple ID or password for your iCloud account on your iOS device, you need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")
Providing you are simply updating your existing details and not changing to another account, when you delete your account, all the data that is synced with iCloud will also be deleted from the device (but not from iCloud), but will be synced back to your device when you login again.
In order to change your Apple ID or password for your iCloud account on your computer, you need to sign out of the account from your computer first, then sign back in using your updated details. (System Preferences > iCloud, click the sign out button)
In order to change your Apple ID or password for your iTunes account on your iOS device, you need to sign out from your iOS device first, then sign back in using your updated details. (Settings > iTunes & App store, scroll down and tap your ID)
If you are using iMessages or FaceTime, you will also need to log out and into your ID there too.

How do I change the Apple ID that the AppStore on my iPhone defaults to? In settings I am logged into one account, but when I try and update various Apps from within the AppStore the default account that comes up, asking for my password, is different.

Eg, the phone automatically brings up an old (defunct) AppleID account login every time I try to update my Apps. I don't know the pword for this account, nor does it have current data about me.
But when I go to settings: store it shows me logged into the correct account.
I have already tried:
logging out and logging back in
downloading a new App from within AppStore (in that case it doesn't ask me for my password or bring up the old AppleID)

You need to buy an upgrade if one is compatible with your Mac model.
PowerPC G3 Macs can only go to 10.4.11.
PowerPC G4 and G5 Macs can only go to 10.5.8.
Macs with a Core Solo or Core Duo CPU can only go to 10.6.8.
Core 2 Duo and better Macs can go to 10.7.5 or 10.8.3 depending on their model. Upgrading to either requires going through 10.6.

I am not exactly sure what you mean by "authorised", but I am experiencing a similar problem...or the same, in that Apple TV keeps telling me to enable home sharing in my MacBook Pro. It does not seem to recognize that home sharing is already enabled on my Laptop.
Is home sharing and "authorised" one in the same? It used to work just fine before these recent Apple TV updates.

From what it sounds like you are wanting to sign out of iCloud with the "old" ID and sign in with the new. The following Knowledge Base article should help you with that issue:

To change a secondary account to a primary account
iOS 5 or later:
Tap Settings > Mail, Contacts, Calendars.
Delete the secondary account.

Delete the primary account.

I changed the email address associated with my apple ID. However, my old email address is still showing in iCloud. It keeps asking for my password, but won't let me in because the ID is wrong. Log out of the current account and log in with the new credentials. You will always get the old Apple ID whenever you update apps that were downloaded/bought with that ID, as apps and media are forever tied to one apple ID.
If you do not want that to happen when you update thos apps in the future, you will have to delete them, and if you want them back, you will need to repurchase/ redownload them with the new Apple ID.

If you want to change the iCloud ID you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted to turn off Find My iPad, then sign back in with the ID you wish to use. When you do this you may find that the password for your old ID isn't accepted. If this should happen, and if your old ID is an earlier version of your current ID, you need to temporarily recreate your old ID by going to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPad, even though it prompts you for the password for your old account ID. Keep in mind you can also use the optical drive of another computer to upgrade OS X. http://support.apple.com/kb/HT2129 has information on how to do that. This works on a Windows PC as well as a Mac.

I'm looking for information and pricing on possibly upgrading the processor from the PowerPC to Intel.
While anything is possible if you had enough money... NOPE, you can't change the CPUs to Intel, nor can you get any faster PPC upgrades for it. It'd be far cheaper to buy a new IntelMac than to replace everything inside the G5, and I mean just about everything, then figure out how to machine the case & such to mount Intel Logic Board, Graphic Card & such.

so, you'll probably need to use dng converter 7.4 because your cs5 program won't accept a 7.2+ update. but check first because it's not clear what cs5 program you're trying to use.
