I (desperately) need to update my Gateway laptop from Vista to Windows 7. How can I do this without losing all my iTunes information and my iTunes account (which is on my computer)?

To have EVERYTHING as it is Now...
Copy your ENTIRE iTunes FOLDER to an External Drive... and then... after the Upgrade...
move it back to your Computer..

You cannot use someone else's apps without violating the license agreement. The apps are tied to the owner (via Apple ID). The right thing to do would be to update and start fresh.

Apparently Google keeping a "copy of everything" isn't deterrent enough for you to get another device. Correct me if I'm wrong, but you've posted in the Android forum, indicating you have a Google product.
Frankly, I could care less about them copying everything. I don't post or type anything online that's incriminating or private anyway. Technically, your ISP has access to anything and everything you transmit or receive through their network, anyway.

I try the pages ->add a page beak but it messing up with all the images below. Examples : I want to insert a page between page 1 and 2. My images doesn't follow my text. All the images stay in place and all the text bump 1 page. Pretty frustrating!

An iTunes account cannot be transferred to or created on an iOS device by itself.
Did you sync your iPhone with iTunes when iTunes was logged in with your kid's iTunes account - did you transfer any iTunes content to your iPhone including apps that were downloaded with your kid's iTunes account?
If so, this is why you are being prompted for the password for that iTunes account.

You can download updates to your computer's iTunes via the Check For Updates button at the bottom of the Apps section of your iTunes library. just hit the  logo in the menu bar (the menu bar is the bar wich is in the top of ur screen) then click "Software Update..." and check the where it says iTunes, then click Update. ur mac will restart and then iTunes will have the latest version (10.5.1)
