How do I update my e-mail address in I-Tunes to my @me e-mail?

I originally had my I-Tunes account under a g-mail account. I can sign in using my @me account, however, when I go to my account it still shows my g-mail address as the primary. It won't allow me to change it to my @me address. I want to change it as I don't use the g-mail account anymore and want invoices etc. to go the @me account.

If you mean that Find My Phone is asking for a password to a different Apple ID to your current Apple ID and that ID is a previous version of your current ID, not an entirely different one.
This feature has been introduced to make stolen phones useless to those that have stolen them.
However it can also arise when the user has changed their Apple ID details with Apple and not made the same changes to their iCloud account/Find My Phone on their device before upgrading to iOS 7, or if you restore from a previous back up made before you changed your details.
The only solution is to change your Apple ID back to its previous state with Apple at My Apple ID using your current password, you don’t need access to this address if it’s previously been used with your Apple ID, once you have saved these details enter the password as requested on your device and then turn off "find my phone" and delete the account from your device.
You should then change your Apple ID back to its current state, save it once again and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

Go to https://appleid.apple.com then click on Manage your account. Sign im when prompted. Choose Password and security. Answer the security questions then you should be directed to the page where you can change the questions on your account and the rescue email as well. And your password if you want to. You can continue to use them as Apple ID's, change the rescue address (as you know)
You can use your iCloud address, but it won't be an alias, it's a full email address.

Check all the addresses in the group to make sure they're correct. Many mail servers, Exchange for example, will reject a message entirely if any email in the group is incorrect.

If I am correct on this, another question arises--does this method transfer every email address I use as I notice in Address Book under 'All Contacts' there are some that are missing. I may not have manually added each and every address to my Address Book so maybe that is why some are missing and may not show up in this transfer of Archives? Thanks for your patience Barney.
That's what I would assume. Like I said, the Archive is really just a copy of the AddressBook folder which contains everything related to Address Book and Mail's previous recipients.
Now, the Address Book contacts and Mail's previous recipients are different entities--they just share the same storage location. So, if that is what you mean by there are some missing, they should still auto-complete in Mail since the previous recipients also is used for auto-complete.

When I go to type a mail adress on my ipad I get a drop down list of previous mail addresses including all the typo's and used once. There doesn't seem to be a way of deleting unwanted one's. Unless anyone knows better?

Give him his own account. Setup the mail program in this account.
Create new Account
blue apple > system preferences
clicks on accounts icon
click on lock icon if locked.
enter logon password
click on + icon ( left side of screen just above the lock icon )
after creating new account, you need to logout of your current account.
blue apple > log out ... current count name ...
log on to new account. see if problem goes away.
if it has gone away, some preference file got messed up on your account. Rename the appropriate Preference file. You will have to figure out the name. They are .plist files. Look for these files in Preferences folder which is in your Library folder [ more formally ~/Library/Preferences ]. ... reboot.

Settings>iCloud...scroll down...Delete Account. Then, set things up using the correct ID. Turn everything off first, including Find My Phone. For Contacts/Calendars, you'll be prompted to keep the data on the phone or delete it. Your choice.

I want to change my e-mail address to on my itunes caccount to my resecue mail account and choose a different rescue account. Can someone help me do this. Or would I be better off just wiping by device clean and starting over from the beginning.
