How do I upgrade from "server" version of the OS to the "desktop" version?

I installed the text-based download, and now I have a server-oriented config. How do I
install the necessary packages to get the graphical desktop? Or do I have to redownload
and reinstall?

You're correct. The Getting Started Guide procedure is missing the step for enabling the GDM desktop service after installing slim_install. The instructions will need to be updated to include the following command, executed after the "reboot" step:
svcadm enable gdm && exit

    Mac OS X Versions 10.1, 10.2, 10.3, and 10.4, are complete system upgrades that must be purchased.
    The point upgrades, such as 10.1.x to 10.1.5 (Final) 10.2.x to 10.2.8 (Final), 10.3.x to 10.3.9 (Final), and 10.4.x to 10.4.5 (Pending), can be downloaded for free.
    A Full Retail Version(Link), of the Panther Install CDs(Link), can be purchased rather inexpensively, at some online Apple retailers, Amazon, eBay, AppleRescue, etc.
    They are no longer available directly from the "Apple Store", as "Tiger 10.4.x" is the most up to date OS.
    Here are links to some on eBay, that look legit, but CAVEAT EMPTOR!

    If you do an expanded search on eBay, or Amazon, you will probably find more.
    Be sure not to purchase grey, upgrade or machine specific CDs or DVDs.
    Panther is only on CDs, not DVDs.

    Once 10.3.x is installed, you can use the 10.3.9 Combo Update(Link), to upgrade to the final edition of Panther.
    If your Mac meets the Tiger system requirements(Link), you could also consider installing that, using a FULL RETAIL VERSION(Link) of the TIGER INSTALL DVD(Link).

    I have 5.8 on iMac, but it is not server version, it is a usual OS install. I would say, that the only thing there worth upgrading is adding more memory. You should also keep upgrading Firefox, OpenOffice etc. for comfortable work and avoid memory and resource-hungry or buggy applications (like Safari). I have recently used iMovie to work with video, and I never had problems with image editing there. I can compare to 6.8 on my MacBook - I cannot say there is something I missing on this iMac 5.8 which is present on 6.8.
    In general, I am an old mac user, and I had experiences where OS upgrade speed up things, like going from 10.2 to 10.3, but I still recommend to make sure that you will get rid of the bugs while keeping functionality - notoriouse examples are Photoshop 7 that stopped working on new systems, Gimpshop (and underling gimp 2, though some cured it) and even some Finder features.

    The latest version of iPhoto  - 9.5.1 -  requires MacOS X 10.9.x.  Is it possible to upgrade your Mac to Mavericks? Then you can buy the latest iPhoto from the AppStore.
    If your Mac does not support Mavericks, you could upgrade to iPhoto 9.4.3, see:  http://support.apple.com/kb/DL1650  , but this version is no longer availbale from the AppStore. Buy a boxed retail version of iPhoto '11 from Amazon or eBay, and then update it from the support page  http://support.apple.com/kb/DL1650  .

    Not sure what CCS has that you’re referring to, but TCS5 is out and can be installed via subscription or downloaded installer.

    All these programs levels are a little confusing ..... you currently are on OS X 10.5.8 and want to upgrade to OS X 10.6.8, so you can download iTunes 7.
    You'll need to call the online Apple store, which in the US is 800-MY-APPLE, and buy OS X 10.6 Snow Leopard, from the legacy products list. You'll use the DVD they send to install the new operating system, then run Software Update several times until there are no more updates. At that point, you'll be at 10.6.8 and can download iTunes 7.
    PS. Be sure and have a system backup before upgrading your operating system.

    If your Mini shipped with OS X 10.7 Lion, then it was considered a 2011 build model, or before.
    The Mini 2012 model, is considered a Late 2012, & the last one where RAM could be upgraded.
    And it shipped with Mountain Lion 10.8, which is a fairly OK system if one had older software.
    (However mine shipped in Dec 2014, with Mavericks 10.9.0, and was built in January 2014.)
    There were a few different build versions of Late 2012 Mac Mini, the i5 or i7 processor,
    in dual-core or quad-core, and some CTO or built-to-order versions with other specs.
    You can buy Mountain Lion from online Apple Store, & use a download code emailed to you to
    get the Mt. Lion 10.8 from Apple Servers; this would be about it, since Mavericks isn't available.
    So hopefully that is an option you can exercise; in addition the computer may prefer more RAM.
