how do i view icloud documents on my iphone? I have an icloud account and can access documents via icloud.com but do i need to buy keynote for my iphone to view the documents? Or can I find them somewhere else?

If you have iCloud enabled, and set it to share "Documents & Data" in your System Preferences > iCloud Tab, you should be able to see your pdfs stored in iCloud in the Preview application on your Mac.
In Preview select the "iCloud" tab in the "File > Open" sceen:

Would be a good idea to have an iCloud Drive app, JUST LIKE DROPBOX for fxsake. I want to organize things my way -- not be forced to use app-specific folders and a single layer of nesting. And if you're going to force that on me, then give me a Preview folder and TextEdit folder on iOS.

I did the same thing as you did and mine show up under Audiobooks on my iPhone. I would maybe try doing a search on the iPhone for the audiobook (swipe down on screen) and type in the audiobook to see if you can find the lcoation of the audiobook.

If have separate iCloud accounts and want to keep your all your iCloud data separate, you can create separate user accounts for each of you, then sign into your individual iCloud account within your user account.
If you want to just add both iCloud calendars on your Mac, you can sign into one iCloud account in System Preferences>iCloud, then add the second account in System Preferences>Internet Accounts>iCloud and only check Calendars with this second account.

iTunes wants to keep music on the iPhone even after you want to clear it out and start over. I wish they had a "flush" function. At present after wiping it basically clean, down to one album, then checking the fill option, iTunes fills up the iphone with the same albums I just got rid of... You can only view photo stream photos on an iOS device or computer that is signed into your iCloud account with photo stream enabled. This requires Windows 7 or 8 if you have a PC, or OS X Lion (10.7.5) or higher if you have a Mac. If you do, you can set this up as explained here: http://www.apple.com/icloud/setup/ios.html. Note: you will only be able to access photo stream photos from the last 30 days; older photo stream photos are no longer in iCloud.

Let's address your questions one at a time.
Using your iPhone as a USB drive.
There are many apps for this and even some programs that can be installed on your PC/Mac. Apps on the actual phone I don't have any experience with, but a quick Google will give you a variety of choices. On my computer I like to use iPhone Explorer which works on both PC and Mac.
You said you tried Total Commander, unfortunately I'm not sure what folder you would put it in, maybe in the root create a new subdirectory and place your project in there?

You can read PDF's or ePubs, PDFs can be opened into the iBooks app simply by downloading the PDF through Mobile Safari or Mail or even any other app. As for ePubs these unfortunately have to be managed through iTunes. Simply find your favourite book in ePub format, drag it onto the iTunes window and sync your phone. You should now see you new book in you iBooks library.
I'm guessing you want to be able to explore all the files on your phone and open them. Unfortunately because of how Apple locked up the device that's not really possible (unless you break free ;)) however some apps allow you to create files and folders, but alas I have no experience with these. Though you could upload the documents to Dropbox and then use their app to view the documents.
Movies need to be encoded as MP4 using the h.264 codec, I would suggest converting your videos with Handbrake on your PC or Mac and then syncing them through iTunes.
Unfortunately the iPhone doesn't natively support .avi files, at a time there was the VLC app which works wonderfully unfortunately the developers pulled it. I suggest Googling around a bit and failing that you can always convert them.

You can take email yourself the photos and then print it out that way.
