To close out apps, simply double click the home button and instead of holding down the app icons and clicking on the X mark in older versions, you have to swipe the app window up and away.

I really do not understand what you mean. You can pause the Podcast and then go to another app. you can also go to the other app and then double click the Home button. Then touch and hold the podcast app/Music app and tap the circled minus sign to stop the podcast. You can also just double click the Home button and go to the music controls and tap pause.

You can't currently transfer content from one account to another account. As long as the tracks are on the computer's iTunes that they use/sync to, and your account is authorised on that iTunes, then they should be able to continue to use them.

The number of apps, waiting to be updated is growing, and growing! I want that number to go away. I am not going to update the ones I don't want.

You can't clear the notifications unless you udate the apps. There is nothing that you can do about it - unless you delete every trace of those apps everywhere - in iTunes, your iPad, all iDevices .... and I still don't think that totally eliminates the updates. If you download an App and it is tied to your ID, the notifications will appear somewhere - maybe not on the iPad - but in iTunes at least.

IM+ is an example but I would like to know in general. IM plus somehow runs in the background but sometimes I want to disable it completely I"m not sure how. Same goes for facebook or safari even. 3rd party apps do not run in the background on the iPhone. Apps like IM+ that 'seem' to run in the background do not - your chat account is kept active by the server (not the phone) and/or push notifications via Apple's push notification server are used to alert you that there is server-side activity for the app.
So, you would just need to exit the app, and if you want to turn off notifications, use Settings > Notifications.
Also, note that you can force-quit an app - press and hold the sleep/wake button until you see the power-off slider, then release the sleep/wake button and immediately press and hold the home button for ~6 seconds, until you're returned to the home screen.

My iPad 1 closes my apps when I use them.

These are user-to-user forums, they are not monitored by Apple (there are too many forums/threads/messages for that to happen).
Have you tried closing the app completely ? From the home screen (i.e. not with iTunes 'open' on-screen) double-click the home button to bring up the taskbar, then press and hold any of the apps on the taskbar for a couple of seconds or so until they start shaking, then press the '-' in the top left of the iTunes app to close it, and touch any part of the screen above the taskbar so as to stop the shaking and close the taskbar.
If that doesn't work then you could try a reset : press and hold both the sleep and home buttons for about 10 to 15 seconds (ignore the red slider), after which the Apple logo should appear - you won't lose any content, it's the iPad equivalent of a reboot.

This isn't really anything to do with Apple, except the fact you imported them from your iPhone. It depends on what application you are using, but the default 'Windows Picture Viewer' has the ability to rotate photos. Simply search for the rotate icon or check the File and Edit menus at the top. If you really are having trouble, type your question into google and you're sure to find an answer fast.
