How do you change the program ALL files of a type open with?

Hello. I run Parallels Desktop for Mac on this system. Since I upgraded to v3, OS X wants to open my Mac Word/Excel/Etc... files using the MS Office installed in windows XP from PD. I don't always have PD running, and do not want it to start up to use the programs on it. I know, not a Mac problem... But, my question is this:
Is there a way to change the program that ALL files of a certain type (ex: pdf, doc, txt, etc...) will start? I have tried the OPT+RT CLICK which says to ALWAYS open this file with xxx.... but that only flags that single file. I want every file that I ever open anywhere on my system/network to use the program I specify. This is simple to do in Win XP, and I'm guessing there's a way to do it in OS X.
Help/information appreciated.

Well, with the program Onyx, I've found that LaunchServices database is the culprit. To fix this I just pick a type of file I want to change. Right click the file, choose get info, and change the program it opens with, then click the change all button. Done!

For example, how do I tell mac to open all .php files with TextMate? I tried the open always with but it only works for that one file. The other .php files go back to another text editor. I want it for all of them.

this would possibly be the original application that "assigns" a particular icon to the file. you could try to copy the file (i.e. keep one safe/unmodified) and off the copy delete the extension. You will then be asked to confirm (as it's a copy you can play around with it).
Then open textmate and open the file from there and save it via textmate. This might result in a different icon.
You can always change every icon by highlighting the icon in the "get info" and pasting the icon of choice. Find a useful article:

Yes it does list Preview as default, when the ext is not connected, but once the external is connected Photoshop takes over. I unfortunately can't do anything more about this at the moment as the External decided to stop working.

In many screens the files are organized automatically by last opened date. This information is not available when you click command info on the individual file, however, if you list out the files and click on the option to show last opened on the row on the top you will see this information.
From time to time it is useful to change the creation and modification dates to move where files are displayed in various windows. While there are utilities and articles about changing the creation and last modified date using third party software or the terminal, I have not been able to find any way to change the last opened date. This is useful if you wish to hide a file you recently opened so that another user can't just find it as one of the last opened files.
When I googled this question all the solutions using terminal either with touch -t or touch -mt commands changed the creation and modification dates, but did not affect the last opened date.
Anyone have a solution to this?

I work nights so my "day" starts in the late afternoon. It is weird when Siri tells me my day starts early at 5 am when that is more like the end of my "day". How do I change the calendar and Siri so something in the evening is the first thing on my agenda?

Second, instead of clicking items on the download panel to open them, try clicking the folder icon on the right to open the folder they're in with the file highlighted. What kind of file does Windows say it is? If you right-click the file, do you have the option to open it in another program?
Third, if the problem comes after printing, make sure the checkbox for "Print to file" is NOT selected in the print dialog.

You can only change the size of the cursor, not the cursor itself. Apple has determined that the mouse cursor is the way it is supposed to be and the user should not change it.

Using Windows8, how can you change which program to import photos from iphone?

When I bought a Windows8 PC (Lenovo Yoga) and synched iphone the first time, it defautled to the Photo App on my PC.
