not real computer savy. How do I create different iCloud accounts, so we are not sharing everything?

on iPhone? If you share an iPhone I amafraid you will have to share "everything" unles every time you will be going to settings and reconfigure it.
Otherwise, go to your computer and from different account create an iCloud account.

No: @icloud.com is an Apple email address. To create a new Apple ID you need to start with an address other than @icloud.com, from any other service. Then you go to http://appleid.apple.com and follow the procedure to create a new ID: then you can sign into System Preferences or Settings>iCloud with it. When you enable Mail in the checklist you will be asked to create a new @icloud.com address. You can't transfer an @icloud.com address from one account to another.

Me, my brother and mam all use the same Apple ID (i.e. this one. I'm not Debra) so is it possible to create three different ICloud accounts? You can't have 3 accounts with one ID.
If the reason you want to keep a single ID is so you can share music and apps etc, then you should be aware that the iTunes account and iCloud accounts are different accounts, you can all share an iTunes account but have different iCloud accounts (each iCloud account would have its own ID).

You can cannot delete an AppleID, you just sign out of all services, stop using it, and start over with a new AppleID. If your ID is an iCloud ID it cannot be changed, see this link.

Are you sure the message isn't saying that the maximum number of accounts have already been created? When you get this message you will not be able to create another account on that device. Your only options are to either re-use one of the accounts previously created or create a new account using a different iOS device or Mac, if you have one.

You got it with that same apple id thing. You can use different apple id's, but then they will not sync. Apple does allow as many free apple id's as you want, but they are in the business to make money.

Thanks... I appreciate the reply. Since I wrote the previous email, I actually went and changed my apple id (the main id) and the documentation I looked at said iCloud will set mail up automatically(?)... I had it working before.
Also, I tried to manually set up the ID via the Mail Accounts screen(s) and I can't figure out what my server information is... Pop or Imap? What's the outgoing server and the incoming server?
I typically have never had problems setting up mail accounts (in apple mail) with no problem.
Can anyone point me in the right direction?

Welcome to the Apple Community.
Firstly, you need to change your details with Apple, Start here, change your country if necessary and go to manage your account.
In order to change your Apple ID or password for your iCloud account on your iOS device, you need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")
Providing you are simply updating your existing details and not changing to another account, when you delete your account, all the data that is synced with iCloud will also be deleted from the device (but not from iCloud), but will be synced back to your device when you login again.
In order to change your Apple ID or password for your iCloud account on your computer, you need to sign out of the account from your computer first, then sign back in using your updated details. (System Preferences > iCloud, click the sign out button)
In order to change your Apple ID or password for your iTunes account on your iOS device, you need to sign out from your iOS device first, then sign back in using your updated details. (Settings > iTunes & App store, scroll down and tap your ID)
If you are using iMessages or FaceTime, you will also need to log out and into your ID there too.

Not possible to create a new mailbox with the iPhone.
If the account is an IMAP account, you can create additional server stored mailboxes with the email client used on your computer for accessing the account or via webmail access for the account using a browser. Any additional server stored mailboxes created with an IMAP account will be available automatically when checking the account with the iPhone's Mail client, and will be kept synchronized with the server automatically.
This is not possible with a POP account. You may be able to create additional server stored mailboxes with a POP account via webmail access for the account using a browser, but such mailboxes will not be available with the iPhone's Mail client, or with any email client used to access the account.
