If the movies are in your iTunes library on your computer - and you do want to store them in there if you delete them from the device - just swipe across the Movie icon in the videos app to bring up the red delete button.
If you do not want the movie to transfer back to the iPod when you sync, uncheck the movie in the Movies Tab of iTunes when the iPod is connected to your Mac, with the iTunes running and the iPod selected.
Connect the iPod to the Mac and launch iTunes.
Click on the iPod name on the left side under devices.
Click on the Movies Tab on the right.
Pun check the Movies that you do not want to sync to the iPod
Click on the Sync Movies Heading to make sure that it is selected
Click on Apply in the lower right corner of iTunes
Obviously there is a little confusion as to what exactly you are talking about. Videos that you took with the iPod or movies that are on the device.

How do I delete copies of the same albums off my iPod Touch 2g?

(4 copies) of one album. There was also a few that had 2 copies. I only put 1 copy of
each. When I go to iTunes it shows only 1 set of songs from a particular album. But on my iPod it's
a different story. 4 copies of said album shows up. Why does it do that, and how can I get rid
of all the unnecessary copies? It's annoying to look at.

Is it really 4 complete copies of the same album? Or, is it 4 separate pieces of the same album, each with different songs?
If you have 4 complete albums on the Touch, are you manually managing its contents? If so, connect to iTunes and delete the extra copies. I don't remember if the Touch is affected by this, but if you manually load an album onto your iPod, then make tag changes to that album in iTunes and drag it over again, you'll get a 2nd copy.
If you have 4 incomplete albums, it is likely due to a difference in tag values that should be consistent (e.g. album name). If this is what's going on, check the album to make sure that all songs have the same Artist, Album Artist, Album, and the values for # of songs and # of disks. Any variations in these fields will be seen as different albums by your iPod. If the album has multiple artists, then set the Album Artist of all songs on the album to "Various Artists" and tag all songs as "Part of a Compilation".

Put all the pictures you want to put on your ipod in one folder on your computer. Then, once you're in itunes, click on your ipod (under the devices section). Once you've done this, click on photos at the top and click on the box beside Sync Photos (so there's a tick in the box). It'll say 'sync photos from .......' and then a drop down bar. In the drop down bar it will probably say my pictures or something, click on that. Then click selected folders (unless you want to put all of your pics on) and then tick the folder you want to put on your ipod. Finally, click sync (bottom right hand corner) - it'll load and then your done.

Do you mean remove them from the iPod or transfer them back to your computer? You can't transfer photo's back to the computer with iTunes. To retrieve photos from an iPod try:

To remove individual photos from an iPod you delete or remove the photo from the folder that you linked to when you set the preference "synch photos from" and update the iPod. For example, if the iPod is getting the pictures from the folder "My Pictures," delete or remove them from My Pictures.

Your i-device was not designed for unique storage of your media. It is not a backup device and media transfer was designed for you maintaining a master copy of your media on a computer which is itself properly backed up against loss. Ok...when I am saying your fourth tab I am referring to the tabs that show when you click on your iPod name is the left panel in iTunes...you will see the summary page in the larger screen to the right. IT is the 4th tab within that summary screen. The list for the kind of iPod you have can be found by going to Ipod Family.
