How do you get your recorded vinyl to itunes

Question

I have been recording and stored my recordings using .wav. Now I want to start over on my new MBP but save using MP3.
The old way was to record, save file track with name, put songs into a folder, then drag the songs over to a play list I created in the order of the track listing.
This is not working for some reason with itunes 10
Can anyone help with a good step by step.

I can tell you what I did, which almost certainly isn't the "right" way, but it's a way that worked for me.
As tracks from the records were played (B&O turntable, Crown preamp) they were recorded onto CD (Pioneer CD recorder).  After 12 tracks had been recorded (a completely arbitary number) I finalized the CD and carried it upstairs to the computer.  (At the start of this process the computer was a G5 running Leopard with iTunes 9.something; at the end it was a mini running Lion with iTunes 10.something.)
The CD was placed in the computer's optical drive.  Since it was an audio CD at this point, iTunes opened, as well as the CD mounting onto the desktop.  For my purposes, though, I ignored iTunes and copied the files from the CD into a folder on my desktop.  (They were AIFF files.)  I opened these files and used QuickTime to preview them and trim them to eliminate excess dead air or bits of other songs. 
I dragged these trimmed AIFF files into an iTunes playlist (named something like 'New Songs').  From there I could conveniently add information like song title, album title, composer, album art, etc., then convert them to Apple Lossless.  Once they'd all been converted, I deleted all AIFF files from the iTunes Music Library and that New Songs playlist.
This worked fine for me - one of the songs is playing in the background right now.  I hope it helps.
