How do you reinstall the 3.0 iPod Touch OS?

I don't mean restore, I mean re-install from scratch. My computer had to be rebooted during the installation of the 3.0 update. My family owns two iPod touches (1st Gen). One works perfectly. The other takes a LONG time to boot up; it takes 15 seconds for the apple logo to go away. Then after another 15-20 seconds of black screen, it arrives at the picture of the Earth with the unlock slider along the bottom of the screen. I restored back to factory defaults, but nothing was changed.
Can anyone help?

Thank you for the advice; once I went into preferences and deleted my ipod's backup, the restore worked perfectly. Now the unlock screen shows up within 5 seconds of the Apple logo disappearing instead of the 15-20 it was taking previously.

The other thing I have a problem with, as the subject implies, how do I use it as a hard drive? I've seen the tutorials on apple, but I don't see the "enable disk use" on itunes in the XXXXX's ipod summary tab.

    This is one of the areas that I'm having the most difficulty right now. Here's the setup:
    1 Server with 10.5.8
    3 desktops with 10.6.3
    2 laptops with 10.6.3
    3 users, each of whom has an iPhone. Let's say Jane has been using her desktop all week but is going to work from home on Friday, so she takes a laptop. She logs out of her desktop and logs in with the laptop while on the gigabit ethernet LAN to save time. This goes well, and she goes home. Friday she logs in and needs to sync her iPhone. It now says that she needs to authorize the machine. Ok, she dos this. Uh oh.. now she's at her limit of 5 machines. (Since the iTunes Music Store only lets users authorize 5 machines, this might pop up again) - also, it shows that she has 10 updates to her applications. She thinks this is strange because she had just synced her iPhone the day before and there were no additional updates, and the updates that the MacBook is showing her are the same versions that are installed on the iPhone already.
    I suppose that she can simply re-download the stuff and it won't be an issue, but is that the only effective solution?
    What have you folks done to facilitate 'ease of use' when using portable home directories and iPhone/iPad users?

    The App Store app can't be deleted but can be hidden by Restrictions. Settings>General>Restrictions
    Have you tried using the Spotlight search. Maybe you just can find it.

    The music sync is one way - computer to ipod.  the only exception is ituens purchases.
    You need to copy everything from your old computer, or your backup copy of your old computer, to your new one.

    There is no Mac App Store on Mac OS X 10.6.5 or earlier.
    On Mac OS X 10.6.6 through 10.6.8, run the combo updater for your OS version or a newer Snow Leopard one.
    On Mac OS X 10.7 or newer, restart with the Command and R keys held down, and reinstall the OS.
