Should be pretty easy as follows:
1 - Make sure you have copies of any pictures you want that are inside Aperture somewhere on your computer.
2 - Quit Aperture > Remove any Aperture icon from dock > drag the Aperture program (lens icon) from Applications folder to the Trash > proceed through any warning dialog (including entering password as required) to complete the process.
Note - new security features in OS X Lion may present those warning dialogs to prevent accidental deletion of Apple programs.
3 - Hold down the 'Option' key and use the 'Go' menu in menu bar and select the 'Library' option.
4 - In the Library folder, open the 'Application Support' folder and delete any Aperture folder found.
5 - While still in the Library folder, open the 'Preferences' folder and delete both the 'com.apple.Aperture.plist' and 'com.apple.Aperture.plist.lockfile' file.
6 - While still in the Library folder, open the 'Caches' folder and delete the 'com.apple.Aperture' folder.
7 - Go the your 'Pictures' folder and drag the 'Aperture Library' (may be named Aperture Trial Library or similar) to the Trash to delete it as well.
8 - Empty the Finder Trash to remove Aperture.
Note - there are some files and Aperture folders in the '/Library' folder (which is in the root of your system drive), but you don't really need to remove those. Since you are a beginner, it is probably better not to for now.
That should do it.
Additional edit: There are two Library folders I am referring to. The first is the one in your user account 'Home' folder which is the one you are going to by using the 'Go' menu. This is the one you are deleting files from in the steps listed. The second Library folder is the one in the root of your system drive and is not typically a location for beginners to work with (thus the final note above). Hope that is clear enough.

    First, I recommend restarting your phone and then resetting if it's still not working:

    Try removing the App from iTunes and resyncing your iPod.  If that works, you can go ahead and redownload the application. Just make sure to not to sync it to your iPod touch.

    =Downgrading from iTunes 11 to iTunes 10.7=
    Try activating the sidebar, menu bar, and status bar and see if this is close enough to the previous version to make you content.  It is easier than downgrading and eventually you will be forced to run a newer iTunes unless you have an endless supply of the model computer you currently own.
    You may be able to go back with Time Machine but this may involve restoring other items too (https://discussions.apple.com/message/20441404).  Alternatively:
    Back up your computer first, in case the unexpected happens.
    Quit iTunes.
    Get iTunes 10.7 from http://support.apple.com/kb/DL1576 or the direct download link at:  http://appldnld.apple.com/iTunes10/041-7195.20120912.d3uzQ/iTunes10.7.dmg
    Do a few preparatory steps by making sure all iTunes components are not running and cleaning old files.   See https://discussions.apple.com/message/20475394.  Do steps 3 and 4.  Steps 6-8 may be also useful but I don't know if they are essential.  Some of the other steps are not necessary, duplicate steps listed later in my post or are perhaps even unhelpful in the process.
    Replace the iTunes 11 application with iTunes 10.7.  Simply dragging the application to the trash may not work. Lion (OSX 10.7) and newer systems have iTunes integrated into the operating system and deleting is a bit more involved.  Two ways to do this are:
    1.  (Easier) Use the shareware Pacifist utility (http://www.charlessoft.com/) to install iTunes 10.7 including all associated system files. Details at http://forums.macrumors.com/showpost.php?p=16400819&postcount=6
    2. (More work) Check this reference on how to delete the iTunes application itself:

        After deleting the application there may be other files that need downgrading too. See the note about error -42408 at the end of this post. You may want to tuck these away somewhere safe until you have completed the installation of iTunes 10.7.  I have not tested this but ideally if newer versions are not found then the installer will put in the old versions. This may include these files in /System/Library/PrivateFrameworks/ which apparently get updated by iTunes 11:

    CoreFP.framework
    DeviceLink.framework
    iTunesAccess.framework
    MobileDevice.framework
    After doing one of the two procedures above you will have to rescue the most recent old iTunes library from your iTunes > Previous Libraries folder. Rename it "iTunes Library.itl"  and replace the existing one in the iTunes folder. A newer version of iTunes irreversibly updates your library file so you have to replace it with the old one or you will get an error message. Note, this will revert your library to the version at the time of the upgrade and you will have to update any changes made since.  See:

    There is no need to uninstall Firefox before downgrade. But make a backup copy of your bookmarks and profile folder before new installation even though the downgrade procedure leaves your profile folder untouched.

    I believe you mean to return to Snow Leopard:
    Downgrade Lion to Snow Leopard
    1.  Boot from your Snow Leopard Installer Disc. After the installer loads select your language and click on the Continue button.  When the menu bar appears select Disk Utility from the Utilities menu.
    2. After DU loads select your hard drive (this is the entry with the mfgr.'s ID and size) from the left side list. Note the SMART status of the drive in DU's status area.  If it does not say "Verified" then the drive is failing or has failed and will need replacing.  SMART info will not be reported  on external drives. Otherwise, click on the Partition tab in the DU main window.
    3. Under the Volume Scheme heading set the number of partitions from the drop down menu to one. Set the format type to Mac OS Extended (Journaled.) Click on the Options button, set the partition scheme to GUID then click on the OK button. Click on the Partition button and wait until the process has completed.
    4. Quit DU and return to the installer. Install Snow Leopard.
    This will erase the whole drive so be sure to backup your files if you don't have a backup already. If you have performed a TM backup using Lion be aware that you cannot restore from that backup in Snow Leopard (see below.) I suggest you make a separate backup using Carbon Copy Cloner 3.4.1.
    If you have Snow Leopard Time Machine backups, do a full system restore per #14 in Time Machine - Frequently Asked Questions.  If you have subsequent backups from Lion, you can restore newer items selectively, via the "Star Wars" display, per #15 there, but be careful; some Snow Leopard apps may not work with the Lion files.

    Having had several problems with my iTunes over the past week I seem to possibly be on the verge of finally sorting everything (help from member tt2 is credited with this!)
    However, after spending most of today trying to find my most recently backed up files in order to restore my iTunes (having installed the new iTunes 11 yesterday...think its a bit Marmite - you'll either love it or hate it!!) I created a new Library and I have somehow managed to find all of my playlists I thought I had lost only to add them to iTunes and find....THEY ARE EMPTY! SACRÉ BLEU!
    Bizarrely, all of my albums etc. are showing when I click Music under the Library tab and to top it off when I scrolled through the albums some have the tracks duplicated between 2 > 5 times over on the same album. I un-ckecked the box incidentally under EDIT > PREFERENCES > ADVANCED to ensure that nothing was duplicated so not quite sure what I've done / what has happened.
    My files were in a real mess and I want to get everything dorted so i can back up and delete all my old libraries etc as I need to clear space on my C/Drive and external hard drive.
    Don't want to do anything else without asking someone out there who has iTunes down to a fine art and can point me in the right direction to put my iTunes back together for once and for all. I've lost some of my playlists that were my own compilations as I appear to have not backed up properly, but I have pretty much all my other music including that that I have purchased - except NONE of my purchases are showing either under Store > Purchased which also seems strange cosidering they are showing under Albums.
    Any help to resolve this once and for all so I can do something else with my life would be much appreciated

    The easiest way is to use the event list for each track. The first few events listed for each track should be Control events. Look for control event number 7 (volume) and 10 (pan) and either delete them or set them how you want them by entering new values. If you delete them they will revert to the default values of 127 (max) volume and 64 (centre) pan and you will need to adjust them using the mixer.
