How do you restore without updating?

I'm trying to restore my iPad 3 to factory defaults but iTunes insists on downloading 6.1.1. I already have 6.1 and I just want to restore the iPad but this 10MB update is insisting on taking about 5 hours to download (My internet can download about 100MB in 10 minutes. Why 5 hours?)
Is there a way to force it to use 6.1?

You can't. If you restore your phone, iOS 6.0.1 will be installed on it.

Here's my dilema, and hopfully someone can advise how to fix it:
I have a Pioneer AVH-P5900DVD (car stereo) and it is compatible with iPod's, which have software version 1.2.1., but no higher.
I have a 5th gen iPod which had version 1.2.1., but I accidentally updated the software via iTunes to 1.3. Now the iPod wont work with the car stereo.
I couldn't find out how to downgrade the software from 1.3 to 1.2.1., so I managed to find a 2nd hand 5th gen ipod on eBay, which had 1.2.1. When I connected it to iTunes to transfer my music onto it, it stated that its formatted for Mac, rather than Windows, so I had to re-format the drive. iTunes then stated that I need to restore the iPod, and when I do this, it will only let me restore it with the latest version of the software (1.3). I do not want to do this.
I found the software folders in my computer, and it seems that the earliest version i have is 1.2.3, and iTunes did give me the option of retoring with this version. But it wont work with my Pioneer stereo, which will only work with 1.2.1. or earlier.
So, I either need to:
1) downgrade my original iPod from 1.3. to 1.2.1.
2) restore my new iPod (which has 1.2.1. installed), without updating to 1.3
3) find and download the software files for 1.2.1. from the web, but I cant find them. They should be called: -
iPod_25.1.2.1.ipsw
iPod_25.1.2.1.ipsw.signature
If I managed to get hold of these, I could add them to my computer, then iTunes should allow me to choose 1.2.1. as a restore version on my new iPod.
If anyone knows the solutions for 1 or 2, or where I can get the above mentioned files, please let me know.

I managed to find the .ipsw files on an old laptop, which enabled me to restore both ipods to 1.2.1.

What exactly are you seeing on the phone's screen ? If the iTunes icon and cable then the phone is in recovery mode, in which case it's too late to take a new backup or to copy any content off the phone - you will have to connect the phone to your computer's iTunes and reset it back to factory defaults, after which you can restore to the last backup that you took or just resync your content to it

How do I know if it's on my computer?
If you bought the apps via iTunes, they will be on your computer. If you bought them with the iPhone, syncing would have transferred them. Look for them in:
~/Music/iTunes/iTunes Music/Mobile Applications
Photos taken with the iPhone are transferred via iPhoto or Image Capture when the phone is connected to the computer. Other photos on the phone must have been synched from the computer, so should still be there.

Use the device as designed.
Pictures and videos taken with the device are designed to be regularly copied off the device to a computer.
Contacts are designed to be synced to a supported application on the computer or a cloud service.
Media should exist in iTunes on the computer.
If the device has been used as designed then at most, only a miniscule amount of data is at risk. That data being pics/vids taken since the last time they were copied off the device. Also at risk is app data created since the last backup to iTunes or iCloud.
If the device is in recovery mode and it has not been used as designed, it is too late to salvage the data.

You can try pausing the download by tapping on the Pages icon, but you may not be able to use Pages until the update completes. I don't know that for sure, but I wouldn't want to take the chance on corrupting the app and maybe the files.

Your i-device was not designed for unique storage of your media. It is not a backup device and media transfer was planned with you maintaining a master copy of your media on a computer which is itself properly backed up against loss. Syncing is one way, computer to device, updating the device content to the content on the computer, not updating or restoring content on a computer. It sounds as if the phone is waiting to be activated. Did you update software or something like that on the phone? You can either try to finish the Setup routine, or you can connect the device to iTunes on the computer and then after selecting the iPhone in the device pane, click on the button that says Restore a Backup.
