How do you set up a customized (fonts, etc.) signature for your email on the iPhone?

I have seen some emails from business associates tha instead of "sent from my iPhone" have a signature that includes different fonts, etc. that is attached to emails going out from their iPhone. I see where you can change the email signature via the Mail, Calendars, etc., but how can you customize it?

It is much easier to manage this with an app.
There are a few apps on the store that let you send email to groups, but most will only let you send email from their own app.
if you want to create a contact that you can use like a group (which I think is what you are describing) then our "MailShot Pro" app is the first to do this, it creates special contacts that you can use from most apps on your device. You just address your email by tapping the blue + on the To or Bcc lines and select the MailShot contact.
You can import contacts quickly from your address book with a checklist, import whole groups at once, and add contacts manually if you wish. It is also the only way to forward email to a group, or to send to a group from Siri.

An iTunes account is something you log into online to buy music.
An iTunes library is a collection of media and other items (including apps) on your computer. This is what you see when you open iTunes.
So, do you mean account or library? You can set up a new iTunes account but all your purchases made in that account will remain in the old account and cannot be moved. You can set up a new library by starting iTunes and immediately hold down the option key.

How do you set up a custom color for the standard screen mode

This new colour scheme has not enough contrast for it to be readable, so I was pleased to find custom screen mode. However, there seems to be no way of setting up a custom color for this. Are you referring to the tool icons in Photoshop CS6? There are a few options you can change to help make the interface more readable, but unfortunately, there is not an option to enlarge the tool icons.
It sounds like you may have discovered this already, but if you go to Photoshop > Preferences > Interface, you can change the color of the Photoshop CS6 interface.
You can also enlarge the UI text size in this same window, in the Text preferences box.
You can also make the size of your layers thumbnails larger. You can do this by clicking on the small menu in the upper right hand corner of the Layers Panel and selecting Panel Options.
Here you can change the size of the layers thumbnails.

How do I set a new default font in CS6 for ALL documents

I've seen in many discussions on here how to change the default font for new documents, but no one has addressed the idea of how to make it so that you have a preferred default font that overrides Myriad for any document you open. Is that even possible? I receive files from many different sources and most people just stick with Myriad. I need to change that font constantly in documents to Helvetica Bold and want the type tool to just stay there unless I manually change it myself. Any ideas?

You may try with Helvetica-Bold (instead of just Helvetica for Helvetica Regular); as you can see there may be a bit of trial and error to find the exact name.
If you do, I should be thankful if you will report back so I can add the right name in that hint.

A few approaches are possible.
To prevent the "resume" feature of Safari you can either option-quit it, or hold shift down when starting it.
To prevent the "resume" feature for all applications you can uncheck the box "Restore windows..." in System Preferences, General.

You best ask the windows gallery people. Thunderbird opening more than one window is based on yhow the request is made, not on Thunderbird,
Selecting multiple files in explorer simply adds them to a mail, therefore the Windows gallery is the problem.

You can do this in Chrome because there is a top menu item for it, and OS X supports easily rebinding of keyboard shortcuts that are in the main menus.

Ok, to be more specific, when I compose a new email and tap the blue "+" icon, it takes me to my contacts. My contacts list only lists the person's name, no email address.
