You can restore a backup of the old device to a new one. This will erase everything on the new one before restoring, so this may be an issue if you already have data on the new device.

All photos transferred from your computer are stored in the Photo Library. The photos in the album or albums below are not duplicates - they include a pointer to the original photos stored in the Photo Library. This way you can view the photos in a particular album only by selecting the album, or you can view all photos available in all albums by selecting Photo Library.
Just as with an iTunes playlist. A song cannot be in an iTunes playlist unless the song is in the main iTunes library. Placing a song in a playlist does not duplicate the song. Remove the main iTunes library or the songs from the main iTunes library that are in a playlist and the songs will no longer be in the playlist either. If you've already deleted "everything else"...then plug your phone into a power source and: Settings>General>Reset>Erase All Content & Settings.
Make sure you plug into a power source first...not your computer...as on an iPhone 3G, this can take some time. When finished, all data will be gone.

When you connect the iPhone to your iTunes and then restore. Restore from your backup and it takes everything off the iPhone and puts your data on it.

You can't delete the Photo Library. The iPhone stores photos the same way iPhoto does on a Mac. All photos are synced to your Photo Library. The various albums/folders merely contain pointers to the actual photos which are in your Photo Library, they are not duplicates.

Connect to you're laptop. If you are using Windows:
Click "File Explorer"
Click "Computer"
Click the iPhone
Find "Camera Rolll"
Select all of the photos and delete them.
For Mac:
No idea how macs work but it should be something like the instructions for Windows :-/
As far as Photo Stream, they will automatically be deleted after 30 days and they do not take up iCloud space so you have nothing to worry about.

I finally went to Apple Care tech support (the best!) for help.
Plug your phone into the computer.
I-Tunes should open.
Toward the top left of the page, click on the small I-Phone icon.
Select Music in the sidebar.
In the right window, your music should appear.
De-select what you don't want, then click Sync.
Voila.
I am running Yosemite 10.1.1

I am trying to delete all the music from my iPhone 5 and reinstall it. The names of some of the albums and the artists did not import correctly from my CDs. I went back into iTunes and made corrections, synced my phone and no changes were made to the music on my phone. I have gone into iTunes, selected the device at the top right corner, selected all the music that showed up in the window - gone to the Edit menu, selected "all" and then "delete." The list of tracks disappears from the device list. I then synced the phone again, and the albums are still on the phone. What am I missing, please? I've even shut the phone down and restarted it, synced it again, but nothing changes.

If you had these messages on your phone when you last synced and haven't synced your phone again since losing them, the messages will be contained in the backup created when you synced (unless you are backing up your phone to iCloud). If you restore your phone to this backup it will return your messages to your phone. (If you have already syned again since losing them then you have already overwritten your earlier backup and your messages are lost.) Restoring to a backup will revert all data and settings you your phone to those contained in the backup, not just messages. If you have more recent data on your phone that you want to save you must do this before restoring it from backup. If you want to restore from backup, do the following:
Without connecting your phone, open iTunes on your computer and go to Preferences. On the Devices tab check "Prevent...from syncing automatically".
Connect your phone to your computer, right-click on the name of your phone when it appears in iTunes on the left sidebar and select Restore from Backup, choose your most recent backup to restore from.
When complete, you can go back to iTunes>Preferences>Devices and re-enable automatic syncing.
