Is there a way to tell how old this Mac is somewhere in the OS? I want to justify purchasing new ones. Below information is from the system profiler

Use the serial number at http://www.chipmunk.nl/klantenservice/applemodel.html and you will get build information down to the week, plus exact model designation.
Also, if you have Temperature Monitor installed, you can use its "Show System Window (cmd-4)" to get build information.

I have a mac mini Intel core 2 duo, 1.83 GHz, 2 GB SDRam running Mac OSX 10.6.8. Several of my software apps states its 64 Bit Intel. Can I run Mountian Lion? I have no idea how old my mini is or how to find out. I really just want to use the icloud. ANY help would be GREATLY appreciated.
It would appear you have a Mid-2007 model. You can run Lion but not Mountain Lion. iCloud works with Lion 10.7.2 or later.
Upgrading to Lion
If your computer does not meet the requirements to install Mountain Lion, it may still meet the requirements to install Lion.
You can purchase Lion by contacting Customer Service: Contacting Apple for support and service - this includes international calling numbers. The cost is $19.99 (as it was before) plus tax. It's a download. You will get an email containing a redemption code that you then use at the Mac App Store to download Lion. Save a copy of that installer to your Downloads folder because the installer deletes itself at the end of the installation.

My son bought a refurbed MacBook from Apple in June 2009, but I can't match it to the Apple requirements for upgrading. Now I can't find a way to upgrade to the Mac App Store, Snow Leopard, Lion, Mtn. Lion, etc.

Could you please specify how exactly did you transfer Acrobat from one MAC to other.
You might need to deactivate the software from your old machine and then activate it on the new one with the same serial number (for Acrobat license) or Adobe credentials (for Acrobat subscription).
If you have done the same way, then let me know if you are able to open Acrobat itself.
Do you get any specific error message while opening a PDF?

Sounds to me like you may have gotten a machine with hardware issues, but it's hard to say. It will shut down if it gets too hot, but that's not a normal occurrence. I have never seen a MacBook Pro shut down due to heat, even after lengthy 3D gaming sessions where the fans are running fast and the bottom of the machine is unpleasant to touch.
First thing I would try to do is reset the SMC. If that doesn't help, erase the hard drive and reinstall the system from scratch, which you should always do with a used machine anyway.
If a fresh system doesn't help, you'll need to get it checked out by Apple.

How do I change about this Mac to reflect my new iMac info and not my old G4 info?
After loading Lion and finding out that none of my software is compatible with it, I reloaded Snow Leopard from the Mac OS X Install DVD. I then migrated my software and files from my old G4 Power PC. When I go to About this Mac, it is showing the profile for the G4 not for my iMac. How can I change this? I am also not able to print to my HP Laserjet 5000N. Was able to yesterday and can't today and I can't figure out why. Any help would be greatly appreciated.
Now that you are back to using SL you should begin on a strategy to update your software. Eventually you will need to do it anyway so do it as time and finances allow. Then when you're ready to upgrade the OS you're more prepared.
The apps that will work in Lion are Intel & Universal apps, what doesn't work as you know are PPC (Power PC) based apps. You can tell what each app is by running System Profiler (Applications - Utilities - System Profiler) then click Applications on the left and finally look in the Kind column. The Kind column will clearly indicate if an app is Intel, Universal or PPC. Once you have identified the PPC apps then you can start your plans. Some upgrades may be simple and free some may be more painful. -
