How to back up emails saved to iPhone when email account no longer exists

I have a large number of emails that are on my iPhone 5 that I cannot afford to lose. The email account that they were downloaded from used to be a work email account but I no longer have access to it. I want to update my iOS to 7 but I am afraid that if I do that I will lose all of these emails because I don't have the ability to sync back up to the email account and redownload the data. Is there a way to actually back up these saved emails onto my pc or iCloud or any other method that would still allow me to access them. I can not forward them to another account because without the login from the original email it will not let me forward them. And I only have them on my iPhone so I can't copy them over into another email from outlook or something along those lines.
Maybe there is a way to access the emails in the iPhones file system? The phone is not jailbroken. I am running an iPhone 5 on tmobile with iOS 6.1.4

    The following article details the process of changing the signed in iCloud account on your device.
    iOS 6 and later: Go to Settings > iCloud.
    If you signed out before changing your Apple ID, enter your current Apple ID to sign in. The data from your iCloud account will download to your device.
    If you're still signed in with your previous Apple ID:
    Scroll down and tap Delete Account. Depending on what iCloud options are turned on, you'll be asked to confirm that you want to delete data from your device. To confirm, tap Delete. (If you're using iOS 7 and have Find My iPhone turned on, you'll be asked to enter the password for your previous Apple ID. Enter the password, then tap Turn Off.) The data will be deleted from your device, but not from iCloud.
    Enter your current Apple ID to sign in. The data from your iCloud account will download again to your device.

    The password will not be sent to you, because Apple does not know it. They will send a link where you can reset the password.     The textbox to change the description of the iCloud email account that existed in all previous versions of iOS, and is available for all other types of email accounts under iOS 8, appears to have been removed.  Without this textbox, it is not possible to change the default description of "iCould", or to change a description that was set with a previous version of iOS.  The description field still exists, as the value that I set on a previous version of iOS is still being used by some of my iOS devices, but there is currently no way to change it via the current iOS 8 UI.  The description field is available to change for all other kinds of email accounts.

    I used an iCloud backup to transfer everything on my iPhone 5s to my iPhone 6.  The (modified) description for my iCloud account transferred and appears the way I want it to appear on my iPhone 6.  However, it cannot be changed.
    Alternatively, I also have a new iPad Air 2 that I set up as a completely new iPad (i.e. I did not transfer anything from an older iPad).  The iPad shows the description for my iCloud account as the default: "iCloud."  It, too, cannot be changed.
    True, this is only a minor annoyance, but it would be less of an issue if Apple had not removed a feature that previously existed in iOS 7.
    I'm not sure if the removal was intentional or unintentional, but, again, I hope this gets fixed soon.  In the meantime, I would be interested in anyone can find a workaround.

    My mum had the iPhone that I'm now using for a couple of years, and the iCloud account attached to it uses an email address that was shut down by Virgin, so we can't access it any more to verify emails, etc.
    Now that I'm using it, I want to assign it to my ID or even reset it, but the password my mum is certain she used won't be accepted. I looked around the community and tried to change her iCloud settings online to the old email address and then delete the iCloud on my iPhone using the new password for the new ID she now has, but it won't seem to accept any password.
    Is there any way at all I can do this, or will I have to get a Genius appointment or something?

    Log in and click on your user name, then look at the upper the right side of the page.
    Click on the triangle to the left of the "More Resources" section.
    This will drop down, and give you options.
    Select User Settings.
    This will now open a page, and in the light blue type on top, follow it along to Contact Information, click on that, and change your e-mail address to what you want, and hit the blue submit button on the bottom right side of the page.

    I moved, and cancled my internet provider, losing that associated email (email #1). It was the same email I used for my Apple ID. At some point in the unknown past, the only other email adress I have (email #2) was also signed up for a speerate Apple ID
    I spoke to Apple on the phone, they walked me through changing my Apple ID from email #1 to email #2 and deleting any record of email #1. All worked fine.
    But now, my iPhone can't do anything iCloud related because it's looking for my original Apple ID with email #1. I can't download apps, I can't download podcasts and most frustrating, I can not DELETE the old Apple ID without a password, which I've tried but am told it doesn't like it - probabbly because that email doesn't exist in the first place.
    So, can I do anything before getting back on the phone with Apple?

    I changed my Apple ID password due to a phishing email and it started a downward spiral of issues.  My original ICloud email address no longer exists. I have tried to sign out/in in itunes that worked but I cannot delete the ICloud account because the field is not editable for apple ID. I tried setting it back to the old email address to turn off Find my IPhone but it will nopt allow because the email address cannot be verified because it no longer exists.

    To Delete an iCloud ID you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted to turn off Find My iPhone.  If you don't know the password for your old ID, or if it isn't accepted, and if your old ID is an earlier version of your current ID, temporarily recreate your old ID by going to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID.  Click edit next to the primary email account, change it back to your old email address and save the change.  Then edit the name of the account to change it back to your old email address.  You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID.  You should then be able to delete the old account.  When done, go back to https://appleid.apple.com and change your primary email address and iCloud ID name back to the way it was.

    You never logged into iTunes?
    Your AppleID & Password for iCloud&  iPhone should be the same AppleID &Password you used to log in here and post a message.

After speaking with Apple Acct. Security, I got the security Q right but my birthday was wrong! They wanted the serial number from my phone that was 3 iPhones ago! Seriously??!!
    Any updated way to work around this? No Apple people can correct it.

    If you renamed your iCloud ID and need to change it on your device, go to Settings>iCloud, tap Delete Account, then sign back in with the new ID.  This deletes the account and your iCloud data from your device, but not from iCloud.  Provided you are signing back into the same account, your iCloud data will reappear on your device when you sign back in.
    To avoid losing photo stream photos, save them to your camera roll (if not already there) before deleting the account.  To do this, open your my photo stream album, tap Edit, tap the photos, tap Share, then tap Save to Camera Roll.

    You will need the password. If you can't get it reset via http://iforgot.apple.com (if you remember the answers to the account's security questions then you should be able to reset it via them) then try contacting Support in your country, they should be able to reset it.
