How to delete an email address in Mail

A friend of mine has just changed his email address but I cannot remove his old one from Mail. I have added his new address and removed the old one from my Address book but his old address still comes up as the default when starting a new email to him.
Any ideas would be appreciated...Cheers...

Biggest apologies thought I was writing about iOS!?
Am I also wrong about that too in iOS?

It appears because your mail app remembers a history of addresses.
It cannot be deleted but I think it will disappear after a certain time.

    well, when the "false" address is in the "to" field, you should see a littl' arrow pointing down and a "remove from previous recipients list.

    Don't understand your problem... Contacts sync with a compatible address book or cloud service. Contact records can contain names, addresses, phone numbers, e-mail addresses, notes, or any combination of these. If you have records you don't want in your address book that you don't want in your contacts, then segregate them into groups in your address book and only sync the group(s) you want. If you don't want them there at all, then delete them.

    You can't delete either the account or the email address. If you are getting messages to it you don't want to see, go to http://icloud.com and to the Mail page: click on the cogwheel icon at bottom left and choose 'Rules'. Then set up a Rule to move all messages to your address to the Trash.

    Eva, I found where the previous recipient information is actually stored, unfortunately I don't have a solution yet though.
    Mail's "previous recipients" list is actually stored in ~/Library/Application Support/AddressBook/AddressBook.data. However, as the name suggests this is actually where all your Address Book information is stored. Deleting the file AddressBook.data got rid of my entire Previous Recipients list, unfortunately it deleted my entire Address Book as well. Dragging the file back to the Application Support folder caused every Address Book entry to be duplicated... so I don't recommend this strategy
    I reverted to an Address Book backup to set things right again.
    So it would appear your mystery addresses are probably in the AddressBook.data file, unfortunately I still don't know how to excise the ones you don't want.

    Open mail, in the finder bar select window> previous recipients. Then delet the ones you don't need.

    I think the OP was asking about the "auto fill" zombie email addresses.  If this is the case, they are not even in the address book to delete, they are suggested as you type.  If this is the case, as of right now there is no way to delete these one by one.  Hopefully an iOS update will allow this, as this is an old issue.  If they are truly bothering you, the "zombie apocolypse" is to restore as a new device, not using one of your backups, but then you've lost all your old data, so the cure is worse than the disease.

    Yes, you can delete old email addresses you do not use anymore by going to Mail>Window>Previous Recipient and selecting which old email addresses you want removed.

    When I compose new messages, in the FROM box are listed old mac.com email alias addresses that I have deleted. 
    I tried deleting the icloud IMAP account within mail, then recreating that account.  But still, those old alias email addresses still appear.  And one of them has the name of my ex-girlfriend, so I really want that off my screen, haha!
    How can I delete those expired email address from the from box?
    Otherwise, my iCloud IMAP account works fine.

    Yes, those are email aliases (that I created on mobileme) that I no longer I have.  I still have the main mac.com address, but today I deleted the aliases through iCloud.
    And thanks.  But I already tried that.  After deleting the iCloud aliases on the iCloud website, I then deleted the iCloud account in preferences.  And in the FROM box, ALL the icloud email aliases and main mac.com addresses disappeared.  But when I recreated the iCloud acount within preferences, all those aliases reappeared in the from box.
    I did another test - I set up the email account on my friend's computer (also running 10.6.8).  And same problem.  So looks like the problem is on iCloud's end. 
    Meaning that though I deleted those aliases from the iCloud website, when I create an email account from within Mail, it gets the info from the iCloud server and that hasn't been updated to reflect deleting those aliases.
    Hm.

    I'm having the same issue too. Would love to know how to remove those extra/unwanted email addresses from the cache too.
    This issue has nothing to do with the Contact app. If you received an email from someone who is not on your Contact list and when you replied to that person, next time his email address will automatically saved in your iPad memory and I'm trying to get rid of it but can't seems to find a way to do it. For your info, this address does not appear anywhere in my Contact list.
    Let me give an example. If I received an email from [email protected] and I if replied, this email address will be in my iPad memory even though I switches off or soft reset my iPad.
    Now If I have a friend email [email protected] in my Contact, and if i go into my email app and pressed "T", [email protected] and [email protected] will both appeared under the drop down list. The question is, how can I get [email protected] off my iPad for good?

    Settings > iCloud > Account.
    Under Advanced, select Mail.
    Below Allow Sending From, deselect the email address you don't want to send email from. This won't prevent recieving email that is addressed to that email address.
    Select Done when finished.
