How to find users sessions connected in (11.1.0.7 & R12.1.1)

We have 11.1.0.7 configured in our env with E-business suite R 12.1.1 .
we created different users e.g John , Mark and they are connected through e-business suite application form. But when i query V$session table i dont find these users there.
Where i can find the status of these connected users ?

Usually you start with the Oracle schema that install the application on the database. In my case, I created a schema called QC (quality control) with it own tablespace (QC) - a software from HP. From this schema, I can see all users created via this schame and in the tablepace QC.
Another trick would be to use all_users table to check for the usernames: select * from all_users;

Even whne the privileges are revoked, the java application(users) can able to delete data in the database schema through the java application.

My database is 10.2.0.2 on a four node RAC Cluster. OS is RHEL4.
I was watching total # of session (without system processes) on 9/24/08 at 9AM (from gv$session view) and total sessions across all four nodes were little over 1600. Following was the query I was using to count #of sessions.
select s.inst_id, count(*) from gv$session s
where s.username is not null
and s.username not in ('SYS', 'SYSTEM', 'DBSNMP', 'SYSMAN')
group by rollup (s.inst_id);
Now after few days, when I check the distinct session_id connections using dba_hist_active_sess_history between 9:00 and 9:10 AM, I get lot less count on session_id, little less than 1000. I was expecting same or higher count than original 1600+ since I am giving 10 min time interval.
Following is the query, I am using:
select instance_number, count(distinct session_id) from dba_hist_active_sess_history
where sample_time between
to_timestamp('2008-09-24 09:00:00','YYYY-MM-DD HH24:MI:SS') and
to_timestamp('2008-09-24 09:10:00','YYYY-MM-DD HH24:MI:SS')
group by instance_number;
Am I doing something wrong? Is there any other v$ view or any other sysaux repository table I can view to collect total # of session (with or without background processes) between 9:00AM and 9:10AM on 9/24/08?

On the deployment, monitoring tab, you can select web applications. Here the number of current sessions are listed per web application deployed on the domain.
The deployment itself (deployments, application, monitoring, sessions) shows a list of sessions and where it is located. Unfortunately, there is no aggregation (but that is something you can so yourself as well).
When you are using a load balancer in front, the count of sessions on per web application on the domain gives you some clue how many sessions there are present on each server.
That is to say, when load balancer is using round-robin (and does that correct), you can take the total number of sessions divide it by the number of servers.

That is correct. You will only have audit rows for item that you are auditing. I am suggesting you audit all DDL in a production database since production jobs should not perform DDL with the probable exception of truncate. This will provide this type of information going forward. It will not help you answer the question of who created the procedure last week?
Auditing is explained in the Security manual and the full comand syntax is available in the SQL manual.
You can easily write a purge the audit data to remove data once it is no longer of interest based on the date the audit row was created.

How to find the sessions which generated maximum redo amount at instance?

I use below query or Sql*Plus's set autotrace traceonly statistics > redo size statistic to calculate how much redo I generated in my session;

We need this information because from the produced archived log files we observe something new producing almost 2 times more redo for a week. I looked at statspack report but couldnt find as I suspected for a massive update or delete.

User exits are built into the Standard SAP code. You just activate them and insert your code into the include programs.
Here is a program that will list the user exits per transaction code. Not perfect, but it may help.

SMOD, is where you can find the system modifications provided by SAP. CMOD is where you will implement them. If you are looking for all the enhancements provided, then go to CMOD, follow the menu, 'Utilities-->SAP Enhancements'. This will take you to a screen where if you just execute it, you will get all the enhancements provided by SAP.
It is always difficult to find a user exit if all you have is a program name or a transaction code, unless you do a program like Rich suggested. But even there, you will not be able to find user exits that are implemented as sub-routines(also called forms not sapscript forms). Most of the user exits are documented under the corresponding task under IMG structure. So use transaction code SPRO, go to the IMG structure, choose the application area that your program or transaction might be and then you should find a task that talks about enhancements. If you execute that task most often it will take you to CMOD and sometimes to SE38. But all you want to know is there in the documentation attached to the task. Then you can go to CMOD and see which components are there.
