I have had similar issues backing up to iCloud. Thy only thing I have found to work every time is backing up to iTunes and then doing a restore to my new device. That includes iPhone 6.

Firstly, I note that your profile states that you are using OS X 10.5.8, in order to use iCloud on your computer you need OS X 10.7.2 or better.
Secondly, I have asked for your email address to be edited out. Post your address in an open thread is a sure way to be bombarded by unwanted email, remember it will be here long after you have resolved your problem, for automated detection software to find.
If you want people to contact you, enable others to see your email address in your profile.
Finally, are you sure that these additional addresses are aliases and not sub accounts on a family pack, aliases from MobileMe should transfer to an iCloud when you migrate.

iCloud is not designed as a backup process (IMHO). You should back up your system to an external hard drive. Time Machine and programs that make bootable clones (I use SuperDuper!) work quite well.

Make sure the contacts you are adding are added to your 'iCloud' group and not an 'On My Mac', 'On My Phone' or other non iCloud group (you can do this by checking in groups), non iCloud contacts will not sync.

Do you and your husband share an iCloud account or are you logged into his iCloud account as a secondary account at mail, contacts & calendars.

All my old iphone 4S 'notes' are stored in icloud. When I synced up my new iphone 5 it did not transfer the last ten months of notes onto the phone, just everything prior to that. On your phone. If you have Notes turned to On in Settings>iCloud, and also had notes on the phone prior to turning on this setting, you should have two accounts in the notes app: On My iPhone and iCloud (listed as your iCloud ID).
Did you have notes on your phone prior to turn on Notes in Settings>iCloud? Is Notes turned to On in Settings>iCloud now?

Books are not stored in iCloud. Your purchase history is stored in iCloud and you cannot remove purchases from your purchase history.

You post title and the body don't seem connected.
As for space, go to Settings>General>Usage to see how much "Storage" you have available on the device. Farther down the list is the available storage on iCloud. This should confirm just how much space you think is available.
As for backing up your device to icloud (I assume this is what you mean by "backup my iCloud"), go to Settings>iCloud>Storage&Backup and be sure iCloud Backup is turned on.
