    You can only update to the current version (i.e. 5.1.1) as that is the only version that is 'signed' by Apple.
    You will need the latest version of iTunes on your computer - you can check if you are up-to-date via, on a PC, 'Help > Check For Updates'.
    When you have that installed, connect the iPad to your computer and on your computer's iTunes copy any purchases off the iPad via File > Transfer Purchases (you may also want to copy photos off the iPad as well) and then force a backup of the iPad by right-clicking the iPad 'Device' on the left-hand side of iTunes and selecting 'Backup'. You may also want to copy off the iPad any important documents, notes, files etc e.g. via the file sharing section at the bottom of the device's apps tab when connected to iTunes, via wifi, email, dropbox etc - they should be included in the backup, but it's best to have a copy of them outside of the backup just in case.
    You can then start the update by selecting the iPad on the left-hand side of iTunes, and on the Summary tab on the right-hand side clicking the Check For Updates button.

    The iPad 2 can only be updated to the most recent version of iOS, which is iOS 6. It cannot be updated to anything less.

    You can't update built-in apps individually, you can only update the whole iOS. If you are already on iOS 5.1.1 (Settings > General > About > Version) then you have the current version of iOS and therefore all your built-in apps are up-to-date. If you are not on iOS 5.1.1 and you want to update to it then if you are already on iOS 5+ then you should have a Settings > General > Software Update option on the iPad. If you are on iOS 4 then you will need to update via your computer's iTunes.

    I assume the photos you are trying to save are in the photo library album on your iPad.  If that's the case they can't be imported to your computer by usual methods (as those only import photos from your camera roll).  However, you can use the app PhotoSync to wirelessly transfer photos from any album on your iPad to your computer, including photo library photos.
    If you have only forgotten your passcode, you can back it up and restore it on the last computer it was synced with to remove it.  However, if you no longer have access to this computer you'll have to force it into recovery mode to restore it, the restore from backup if you have one.  These options are covered here: http://support.apple.com/kb/HT1212 .
    However, if you also don't know your restrictions passcode, you'll have to restore it as a new device without using your backup.  There isn't any way to reset it.  All you can do is save as much of your data as you can, such as importing photos (and using PhotoSync to save photo library photos), email copies of your notes and voice memos to yourself, write down your account settings, etc., then restore it as a new device and start over.
