How to keep user settings / app data when upgrading hard drive

I am in the process of upgrading the original 160GB hard drive to something a bit bigger. I'm comfortable with the physical process of installing the new drive, but my question is:
How do I save the existing users / data and transfer to the new installed HD? I really don't want to have to re-install all of the applications, manually save data from each profile and copy, etc etc.
Is there a decent back up utility I can use, and then simply "restore"?

You can get a firewire external drive and use SuperDuper! to clone your current drive to the external. After initializing the new internal drive, all you have to do is perform a reverse clone (which I did yesterday by the way, don't ask) and your new drive will have everything the old one did.

Remove the drive and put it in an external enclosure. Backup the drive completely. Repartition and format the drive. Replace the drive into the computer. Take the computer in for the logicboard replacement.

The fastest method is straight copy and paste..
Plug a suitable hard disk into your computer.. format it Mac OS extended journaled (if not already).
Select the folders/files you want to move.. copy and paste them to the external drive..
Double check that the files are copied because the next step will delete the files forever.. there is no trash on the TC.
Delete the files on the TC.
You can also do a full archive of the TC disk to a USB plugged into it by USB.. it must be formatted Mac OS Extended Journaled. It must be big enough to hold all data on the TC disk.. best idea is to buy the same size or bigger.. so if you use 2TB TC buy a 2TB or bigger external drive.
In airport utility select archive.
That will copy everything on the TC disk to the USB drive.. you could then Erase the disk of the TC.. this is super fast if you choose quick erase.. just a few minutes. But the archive will take many hours.. say for 2TB about 12-24hours.. and you cannot use the disk in the TC during that time.

I just got an LG G3 phone yesterday afternoon and have 500 mg to use and have already maxed it out and have hardly even used the phone!!!!!!!!!!!!!! My husband doesn't even use the internet, and if he does I am the one that finds the page he needs, and he really doesn't even know how to use it. So, please help me understand how data is being used almost all day, all night, and even when we are sleeping and the phone is not being used for anything? As a matter of fact, I am on my laptop and can't sleep because of this!! My phone is in the other room and I bet data is being used right now. But, I know don't anyone uses that much data in a DAY and A HALF when the phone is not in use. I have had three phone calls all day and only one I answered and I made one call out, but data has been used all day. And I have had free 250 mg for probably at least six months and have used no data and now all the sudden when I have been on my laptop all day the data is used. My MacBook Air has 64GB of flash storage and I recently purchased a 500GB G-Drive external hard drive. I was hoping to free up the installed flash drive since I show about 19GB of Apps on it. It won't go over and now Time Machine is not backing up all my photos and music to the external. I figured I paid for them, I should be able to save them as I see fit and not have them stuck on my flash drive. What gives?

Your problem(s) could be caused by a number of different issues. I suspect that the reason you can't copy the applications over to your external drive is a permission's problem. I selected my external drive and then chose File>Get Info from the menu. You should do the same.
The above is what I see after the GetInfo. I clicked on all the triangles to make the picture smaller because what I want to point out is at the bottom. In the bottom right hand corner is a lock. I clicked that and then typed in my password. Then in the bottom left is the Ignore ownership on this volume checkmark. I clicked on it so ownership is ignored. This lets me put files on the drive reguardless of who owns the files. I suspect your external drive doesn't have this option checkmarked.
Now, having fixed this problem (I hope) I urge you to be very careful about putting applications there. I have two hard fast rules: 1) never move any program when it comes with an installer and 2) never move any program I buy from the App Store. The reason is simple: when these programs receive updates the programs are expected to be where they were originally placed and the updater doesn't look for them. Consequently your programs aren't updated and sometimes odd 'gifts' are placed in your Applications folder.
However, many programs come in DMG packages and you drag them to your applications folder to install them. These can be safely moved anywhere you'd like to. Usually, but not always. Even with these programs, some have dumb updaters that won't work properly and some mysteriously stop working if you move them.
It is best to move data not applications. Movies (and other video), music, and photos are the best choices since they tend to be large files.
You also indicated that TimeMachine isn't backing up all your photos and music any longer. Are the files all in one place? In other words, is the music being backed up and the music not being backed up all on the same hard drive? I have a suspician they aren't but I want to confirm that first.

Could be many things, we should start with this...
"Try Disk Utility
1. Insert the Mac OS X Install disc, then restart the computer while holding the C key.
2. When your computer finishes starting up from the disc, choose Disk Utility from the Installer menu at top of the screen. (In Mac OS X 10.4 or later, you must select your language first.)
*Important: Do not click Continue in the first screen of the Installer. If you do, you must restart from the disc again to access Disk Utility.*
3. Click the First Aid tab.
4. Select your Mac OS X volume.
5. Click Repair Disk, (not Repair Permissions). Disk Utility checks and repairs the disk."

Then try a Safe Boot, (holding Shift key down at bootup), run Disk Utility in Applications>Utilities, then highlight your drive, click on Repair Permissions, reboot when it completes.
(Safe boot may stay on the gray radian for a long time, let it go, it's trying to repair the Hard Drive.)
If perchance you can't find your install Disc, at least try it from the Safe Boot part onward.
If 10.7.0 or later...
Bootup holding CMD+r, or the Option/alt key to boot from the Restore partition & use Disk Utility from there to Repair the Disk, then Repair Permissions.

Do a Time Machine backup to an external drive. It backs up everything.
Instead of restoring from time machine backup, go into time machine and drag out the things you want to restore.

I had about 400 compact discs and a few itunes worth of music on my itunes when my hard drive crashed.
My music is still on my ipod but it seems if I put anything on my new itunes folder on my new hard drive, I'll lose my old music when I sync.
Is this correct?
I'd appreciate any help on how to live with this lost data on my hard drive.

Yes, Your new install will want to overwrite the iPod with a blank library given half a chance. Check out this post from Zevoneer for some iPod recovery options.

Should explain how you can drag your music back from the iPod. I've used the manual method successfully in the past. Some of the other tools can take a long time to catalogue the iPod so be patient.

No backup is a huge mistake.

I am extremely disappointed and angry with Apple service. I am a writer and booked three weeks in Spain so that I could finish my book. On the second day my laptop cut out on me asI was working on it, so I took it to Goldenmack in Cadiz. Ok so there's nothing I can do now to get back the three chapters of my book that I have lost and didn't back up, but the hard drive on this laptop is still faulty. I try to back up my work every time I use the machine but as soon as I attach an external drive, the whole thing shuts down. I can't use it any more as I can't risk losing any more work. This laptop is only just over a year old and this is just not acceptable, especially since I have really looked after it.
This is an appalling service I have encountered from Apple, and I am not going to ignore it. I have contacted the young chap whose laptop I was erroneously given, and the repair of which I paid for! (although I did eventually get a refund), to ask him if he had been given mine as well. He said he had been completely unaware that his laptop had been given to me and he is furious as he had loads of "sensitive material" on it."
