Christmas morning my son deleted a video from my iPhone 5 before it had been synced with my computer. Is there a way to retrieve the video?

According to Apple, the videos get backed up in iTunes when you do a sync/backup, so connect your phone to iTunes and restore from the latest backup. It's not a good idea to store videoss in the camera roll of your phone.
If you did a backup/sync in iTunes, your data are safely tucked away in a database in your computer but you need another tool to extract and copy back to your iPhone.

You cannot, unless they were there at last backup. You can try restoring from backup, losing anything done since the last sync.
