How to setup separate WIKIs in Portal 7.1 (u1+)

This is moved over from a previous thread as it is a rather important question.
What I'm asking specifically about is when setting up more than one wiki (through psconsole, admin tools) how are those wikis configured to have same/different content?
For example: when creating two containers with a wiki channel for each I have two wiki tabs but the content is the same for both. How would I go about setting them to each have their individual content?
I'm fine with having to use manual tools to configure each separate wiki. We don't want user communities but just different wikis for different roles that are setup by an admin to be in a tab somewhere for these roles.

If you are using 7.1u1 then communities tab should be available on your desktop along with other tabs?
To create a new community
1. Click on the Communities Tab >> Create a new community link
2. Create a new community of type "wiki" by specifying a community name and corresponding permissions
[Note: A public community contents can be accessed by anyone by searching it using communities search portlet . To restrict access of the contents of your community, you should create a private community or custom community)
3. Now the first page which you seen on accessing a wiki community is Main wiki page of that community . Any page that you create within this community will be unique to that community. For example you can create a community called "MyWikiPublicComm" and within that community you can create some wiki pages named "Test", "Blah" etc

To make the wiki community accessible by desktop wiki portlet
As i earlier mentioned, set the wikiPage portlet preference to your communities particular wiki page . Assume i want to set the "Test" page of "MyWikiPublicComm" community, then
you can go to psconsole >> Manage channels & containers >> Navigate to the tab where wiki portlet channel is added >> Click on the wiki portlet channel (DefaultWikiContainer channel)  >> set the "wikiPage" portlet preferance to "MyWikiPublic:Test" .
Now clicking on the wiki tab on desktop should bring in the contents of the "Test" wiki page available inside "MyWikiPublicComm" community.
