How to sign out of icloud on a mac, save calendars?

Hi there. I just bought a new iPhone 5 in Australia (I'm from NZ). I created a new Australian iTunes account and want to use iCloud with my mac and iPhone. How do I sign out of iCloud on my mac without deleting my calendar and notes? It seems I have to delete my calendars on my mac to sign out. Thanks in advance!

Calendars.
Export them to your desktop before you delete them, you can then re-import them once you have changed accounts.
Notes.
Move them to the 'On my Mac' account before deleting the account and move them again to the new account once you log in.

    You can sign into your iCloud account on more than two devices at the same time if you want.  But if you want to sign out on your old phone, go to Settings>iCloud, scroll down and tap Delete Account, then provide your password (if running iOS 7).  This will only delete the account and data from this phone, not from iCloud.  Your other devices won't be effected by this.

    Welcome to the Apple Community.
    You need to delete the account from your iOS device first, then add it back using your updated details. (Settings > iCloud, scroll down and hit "Delete Account")
    All the data that is synced with iCloud will also be deleted from the device (but not from iCloud), but will be synced back to your device when you login again. It will not be deleted from Any of your Dad's other devices or from his account.

    Under System Preferences - > iCloud, I have enabled "Find My Mac" and I want to use "Back to my Mac" as well.

    Also, if you sign out, your contacts, calendars and bookmarks will stop syncing. iCloud is designed to be left signed in if you are using any of the services it provides.

    I have just purchased a new iMac and when setting up signed into iCloud using an existing account. As I have a new email address, I then went to apple.com and changed my apple ID successfully, which then threw up several error messages on the iMac from programs that were using it.
    I then went to system preferences - iCloud which is still showing my old Apple ID and is asking me to verify my Apple ID password (which does not work with the new Apple ID)
    Obviously I need to sign out and sign back in using my new Apple ID but when I hit the Sign Out button, after a minute or so of a "Signing out..." box appearing, Im getting an error message saying "Your iCloud account couldn't be removed at this time. Turn off all iCloud services and try again."
    I have closed every application on the iMac, signed out of iTunes and App Store, what else is stopping me from signing out and logging back in using my new Apple ID?

    I set up an apple id for my wife and I can not figure out how to sign out of Icloud on her new phone, which is currently using my apple id

    Go to Settings>iCloud and tap Delete Account, then sign in with the new ID.  This deletes the account from her phone, but not from iCloud.  When you delete the account your will be prompted about whether to keep or delete the iCloud data from the phone.  If she needs to migrate a copy of the data to her new account, choose Keep; then choose Merge with iCloud after signing into the new account.

    Had to change Apple ID due to email address no longer valid.  Trying to change id for icloud...saw direction online about signing out of icloud and signing back in...when it ask questions about contacts, photos, etc. being deleted how do I answer those?  That just sort of freaks me out.

    For the ones that give you an option, select the option you want (keep on the Mac or Delete). For the ones that are simply warning you, click on Delete from Mac.
    They will all come back when you sign back on, since all you did was change your existing Apple ID to a new email address. It's the same iCloud account, just with a different name.
    It's the only way to get your updated ID signed onto iCloud.

    My son has an iPad, but it's configured with my wife's iCloud account. Since he's a minor, we've used a 'family' account for music and apps purchases. I'm starting now to set up up with his own iCloud account, but I see that his iPad is already configured to use my wife's iCloud account.

    Go ahead, tap the delete account button. Deleting the account from your iOS device will do just that, it will not delete the data in iCloud.
    By the way are you aware that iCloud and iTunes are different accounts. You can maintain separate iCloud accounts and hence separate contacts, calendars etc, etc, though share an iTunes accounts and hence all your music and apps.

    That means the Restriction is set that prevents changing accounts. Go to Settings>General>Restrictions and unset it so you can delete the account.
    Deleting the account for one device does not effect the account on other devices.

    Basically, someone was hacking my apple account for a while and kept changing the password so i kept resetting it, now i've had to change my email as icloud still wouldn't accept my new passwords - even after being updated.     If you mean that Find My Phone is asking for a password to a different Apple ID to your current Apple ID and that ID is a previous version of your current ID, not an entirely different one.
    This feature has been introduced to make stolen phones useless to those that have stolen them.
    However it can also arise when the user has changed their Apple ID details with Apple and not made the same changes to their iCloud account/Find My Phone on their device before upgrading to iOS 7, or if you restore from a previous back up made before you changed your details and some other circumstances.
    The only solution is to change your Apple ID back to its previous state with Apple at My Apple ID using your current password, you don’t need access to this address if it’s previously been used with your Apple ID, once you have saved these details enter the password as requested on your device and then turn off "find my phone" and delete the account from your device. It may take a short while to remove the account.
    You should then change your Apple ID back to its current state, save it once again and then log back in using your current Apple ID. Finally, turn "find my phone" back on once again.

    As far as I know you can't delete the primary email address for an iCloud account.  It's assigned when the account is created.  But your neighbor wouldn't have been able to get into your iCloud account without your Apple ID and password.  Are you sure the account wasn't still on your phone when you gave it to him?
    You could migrate a copy of your data to a new iCloud account but I would still be concerned that someone else was using my old account, which presumably still has your data in it.
    I'm fairly certain that you're going to have to have iCloud support help you sort this one out as they may have the ability to make changes to an existing account that users can't.  Make an appointment with the genius bar at a nearby Apple store and have them take a look at it.  If necessary, they should be able to contact iCloud support for you.
