If your iTunes library has all the songs that are on your old iPod, then just plug the new one in and iTunes will ask if you want to change the link; click yes and your songs will transfer. It's next to impossible to do it the way you're describing.

If you want to delete content from your computer but keep it on the iPod (so that is not deleted next time you connect it to iTunes), you need to set that iPod to manage the iPod content manually.

There are basically two different methods for how to manage two iPods on a computer, but keep what the content that's being synced to them separate; you can have different user accounts, or different playlists in iTunes for each iPod.
