How to sync Library without updating iPod library

I somehow lost the ability to sync my iPod by just updating the main Library.
Now all the sudden when I plug in iPod, I see "Music" and all my playlists listed under the device and have to update that music through the main Library.

    You can sync music to the iPod by connecting it your computer, selecting the iPod on the left-hand side of your computer's iTunes, and then using the Music tab on the right-hand side of iTunes to select which of your iTunes music library to sync to it.     Here's my dilema, and hopfully someone can advise how to fix it:
    I have a Pioneer AVH-P5900DVD (car stereo) and it is compatible with iPod's, which have software version 1.2.1., but no higher.
    I have a 5th gen iPod which had version 1.2.1., but I accidentally updated the software via iTunes to 1.3. Now the iPod wont work with the car stereo.
    I couldn't find out how to downgrade the software from 1.3 to 1.2.1., so I managed to find a 2nd hand 5th gen ipod on eBay, which had 1.2.1. When I connected it to iTunes to transfer my music onto it, it stated that its formatted for Mac, rather than Windows, so I had to re-format the drive. iTunes then stated that I need to restore the iPod, and when I do this, it will only let me restore it with the latest version of the software (1.3). I do not want to do this.
    I found the software folders in my computer, and it seems that the earliest version i have is 1.2.3, and iTunes did give me the option of retoring with this version. But it wont work with my Pioneer stereo, which will only work with 1.2.1. or earlier.
    So, I either need to:
    1) downgrade my original iPod from 1.3. to 1.2.1.
    2) restore my new iPod (which has 1.2.1. installed), without updating to 1.3
    3) find and download the software files for 1.2.1. from the web, but I cant find them. They should be called: -
    iPod_25.1.2.1.ipsw
    iPod_25.1.2.1.ipsw.signature
    If I managed to get hold of these, I could add them to my computer, then iTunes should allow me to choose 1.2.1. as a restore version on my new iPod.
    If anyone knows the solutions for 1 or 2, or where I can get the above mentioned files, please let me know.

    I managed to find the .ipsw files on an old laptop, which enabled me to restore both ipods to 1.2.1.
    Problem solved.

    Not in Mountain Lion, there it's called "calendar & reminders".
    I'm syncing my calendar with Google and I want to still use that way.

    I am unable to sync neither my calendar nor my contacts to my brand new 160GB iPod classic from iTunes 7.5. All ticked and enabled in preferences, I am aufait with iTunes so I have all the settings correctly enabled - I believe my stumbling block is Outlook/Office 2007 Enterprise Edition??? I have switched to Vista in the last few weeks but that is not the root of the problem, as I had this problem first on my last machine - XP HOME.
    Is there a conflict with new generation iPod's and Outlook 2007?

    You need to put the iPad into recovery mode, if you succesfully do that then your computer's iTunes won't prompt you to enter the passcode on the iPad : Forgot passcode for your iPhone, iPad, or iPod touch, or your device is disabled

    And welcome to Apple Discussions!
    First, you will have to or can import the video into iTunes. Once you have done that, you will have to convert the video to a more friendly iPod format, because .avi files are not supported by the iPod Touch.
    Use can use iTune's built in converter for this. Just control-click on the file and choose "create iPod or iPhone" version from the shortcut menu or select this option from the Advanced drop down menu.
    When the video has finished converting, you can sync it to your iPod as long as you have set up your iPod to sync videos. If you haven't done so yet, this article should be able to assist you.

    Another option is to use a third party utility such as [MPEG Streamclip|http://www.squared5.com> to convert the videos for you. Once converted, you can imported the newly converted video in iTunes and sync it to your iPod.

    I've been looking all around these boards for over an hour and there are definitely topics about the rental movies and the different iPods they will sync with etc etc... I'm having the same troubles a lot of others are, like my rented movies won't show up in the Movies tab. I even dragged the picture of the rented movie to my iPod icon but only the picture moves and nothing else.

    You can't.  iCloud is only compatible with iOS devices running iOS 5 or later.

    You can't.  Part of the restore process involves updating the iOS.
    The only reason why you wouldn't want to update your iOS is because your phone is jailbroken.  Jailbroken phones cannot be discussed on this forum.

I tried all 5 Rs, and even erased the drive with Disk Utility, after restore, I can copy songs from iTunes while using it as a disk, the ipod works fine, but the iPod crashs everytime finished sync. This morning I tried to sync with my girlfriend's Mac mini (she has about 8G music in her iTunes), it works no problem at all. So I am thinking the problem is with my iTunes - any help please?
    p.s My last attemp was deleting the ipoddriver.kext from extensions libary, still didn't work.

    The iPod classic not bring recognized is unrelated to iTunes Match. You should post this problem to either the iPod Classic forum https://discussions.apple.com/community/ipod/ipod_classic or the iTunes for Windows forum https://discussions.apple.com/community/itunes/itunes_for_windows. Probably the former.
    FYI it is only iOS devices that cannot be synced via USB with iTunes Match enabled.

    Update: After restoring the iPod synced almost 1/3 through my playlist and then started syncing at a rate of about one song every four to five minutes. Eventually it stopped syncing and froze. Now iTunes is completely frozen.

    If I update my iTunes to 7.6, when I plug in my iPod will it require that I update iPod software too?
    If I update my iPod I will lose the majority of my music because it will require me to factory reset (it was initialized on a PC and is still on those settings) so I don't want to be forced into that option. I'd like 7.6 though so I can rent movies.

    No, you'll have the option to update iPod software--or not. I updated to iTunes 7.6, but I still haven't updated iPod from 1.2.1 to 1.2.3.

    I use my ipod with 2 different computers and beleive I left auto update turned on one pc. If I connect it will wipe out the work I have done over the weekend using my other machine.     You can use a keyboard command to prevent your iPod auto-syncing with iTunes. While connecting the iPod to the computer hold down the Shift + Ctrl keys (on a Mac hold down the Option and Command (⌥ and ⌘) keys). This will stop the iPod from auto-syncing with iTunes and the iPod will appear in the source list. Wait until you are sure the iPod has mounted, and that it will not auto sync and then you can let the keys go. This may take between 3 and 30 seconds depending on your computer. Then go to Preferences>iPod and check the "Manually manage songs and playlists" box.
    Another way is to connect your iPod and before it starts to sync, click the little X on the right hand side of the display beside the "Do Not Disconnect" message. The display is the little window to the right of the iTunes control buttons: iPod Interface

    You won't erase your iPod if you heed the iTunes Warning dialogue box.
