copy the entire iTunes folder from the old to the exact same location on the new machine. you can use an external HD or your network to do that.

My powerbook was stolen. I have noew a replacement but when i plug in the 30 gb ipod it tells me ts the wrong computer. How can I get the new computer to be "the one" the ipod can recognise. Connect your iPod to your computer. If it is set to update automatically you'll get a message that it is linked to a different library and asking if you want to link to this one and replace all your songs etc, press "Cancel". Pressing "Erase and Sync" will irretrievably remove all the songs from your iPod. There's also a manual method of copying songs from your iPod to a Mac or PC. The procedure is a bit involved and won't recover playlists but if you're interested it's available at this link: Two-way Street: Moving Music Off the iPod
Keep your iPod in manual mode until you have reloaded your iTunes and you are happy with your playlists etc then it will be safe to return it auto-sync. I would also advise that you get yourself an external hard drive and back your stuff up, relying on an iPod as your sole backup is not a good idea and external drives are comparatively inexpensive these days, you can get loads of storage for a reasonable outlay.

You can't backup a Nano, there is not such function in iTunes. You need to use 3rd party software, such as Yamipod, to move music from your Nano to your new computer.

You need to authorize your new computer in iTunes with the same account that is synced to your nano (and old iTunes)
In the menu bar click Store >> Authorize This Computer…
This will allow your purchased music to be re-downloaded from iTunes and played on your new computer.
If you did not purchase the music through iTunes, you may need a third-party program to get the music off the nano. However, It is much easier (by far) to move your old library from your old computer to the new one if you still have access to the old files. iTunes will not transfer music from your nano to the computer. It is a one-way sync.
If you still have access to your old files, search google for how to transfer an itunes library, and follow someones instructions. It's not too complicated. You may want to specify mac to pc, pc to mac, mac to mac, or pc to pc, as the instructions will change.
