How to type accents on letters (the old way)

Typing accents on letters (á, ë and ø) is handy on Yosemite if you just needs 2 or 3. If you have to type a French text it's a ****. It's slowing down typing big time.
Is there a way to get the old way or Windows way back? That is: typing a ' and an a for á and " followed by an e for ë.

Yes, go to system prefs/keyboard/input sources and use the plus and add buttons to activate the keyboard called US International PC.  Then choose that in the "flag" menu at the top right of the screen.
