If your version is older than iOS 4.2.1 connect to iTunes on the computer you sync with to update.

If it's jailbroken and you are updating the phone to a higher iOS you will lose your unlock and jailbreak status. As for updating the iPhone, you can plug your iPhone into a computer via USB and run iTunes, it should then automatically scan for a newer version of iOS.

You can't. If your device qualifies for the most recent iOS version (your iPhone 4S does), that is the version that will be installed. If, on the other hand, your device was an iPhone 4 (not the S), the device does *not* qualify for iOS 8 so iOS 7 would instead be installed.

Hi, how are you going about it at present? Are you trying via Wi-Fi or by linking your phone to a computer and using iTunes?
There is a massive, massive demand for this at present so if you've started to download the software and then get an error message, close 'Settings' and retry again. The same is true if you're seeing a massive time for download displayed, 20+ hrs.
Keep trying at different times, I had about 5-6 attempts before it worked for me last night on both my iPhone and iPad.
