It depends on the type of ebooks. For example, books from Amazon are transferred via the Kindle app (logging it into the same account as the one on the PC and downloading the book again at no charge from your account).

    Are these photos you took with your old iPhone?  If so, import them to your computer (as they should have been in the first place).  Once on your computer, synch them to your new iPhone.

    The same way it worked in every previous version of iTunes.
    Connect the device to the computer.
    Select the Photos tab.
    Select the folder to sync to the device.

    You cannot. The music must be in the iTunes library first. See these User Tips:

    Make sure your iMac is on 10.6.8 or higher and your iTunes is up to date.  If it is, then restart your computer, open iTunes, then plug in your device.  If it still is not showing up, follow the steps listed here: iOS: Device not recognized in iTunes for Mac OS X
