To my knowledge your CC infomation is not on the iPod but on an Apple server. To make a blank iPod I would g to Settings>General>Reset>Erase All Content and Settings
If you restore you iPod to factory defaults/new iPod via iTunes, your iPod willbe signed into the account that iTunes is signed into.

    Yes, you need to restore. Here is how:
    Plug your iPod into a computer with iTunes
    Go into your iPod's section on the bar on the left hand side of iTunes
    Click restore
    Confirm the restore with the dialog boxes that pop up.
    When it is done, if you have a recent backup of your iPod in iTunes, you can tell it to use it.

    Any photos in your camera roll, not previously imported to your computer, you will lose. You should be regularly importing these photos, as the iPhone's camera roll is not designed as a storage device.
    Had you been regularly syncing/backing up, you wouldn't lose anything. Now you know, don't backup your data, and you will eventually lose it all, guaranteed.

    Downgrading will require that you erase the drive, so everything on the drive will be deleted. You should make a backup of your system beforehand, although not everything can be restored that may be Lion dependent. Here's the downgrade procedure:
    Downgrade Lion to Snow Leopard
    1.  Boot from your Snow Leopard Installer Disc. After the installer loads select your language and click on the Continue button.  When the menu bar appears select Disk Utility from the Utilities menu.
    2. After DU loads select your hard drive (this is the entry with the mfgr.'s ID and size) from the left side list. Note the SMART status of the drive in DU's status area.  If it does not say "Verified" then the drive is failing or has failed and will need replacing.  SMART info will not be reported  on external drives. Otherwise, click on the Partition tab in the DU main window.
    3. Under the Volume Scheme heading set the number of partitions from the drop down menu to one. Set the format type to Mac OS Extended (Journaled.) Click on the Options button, set the partition scheme to GUID then click on the OK button. Click on the Partition button and wait until the process has completed.
    4. Quit DU and return to the installer. Install Snow Leopard.
    This will erase the whole drive so be sure to backup your files if you don't have a backup already. If you have performed a TM backup using Lion be aware that you cannot restore from that backup in Snow Leopard (see below.) I suggest you make a separate backup using Carbon Copy Cloner 3.4.1.
    If you have Snow Leopard Time Machine backups, do a full system restore per #14 in Time Machine - Frequently Asked Questions.  If you have subsequent backups from Lion, you can restore newer items selectively, via the "Star Wars" display, per #15 there, but be careful; some Snow Leopard apps may not work with the Lion files.

    If you restore from your last backup, it will replace what you now have on your phone. If you set it up as new, you will have a phone just out of the box without any of your data on it. You can download any apps again. You can sync your music through iTunes.

    Read Syncing music to iPod is a one-way street. The iPod/iTunes system is designed not to let you copy music from your iPod to your computer, other than as described in this article, as an anti-piracy measure.

    All you have to do is this: Sync your 3GS to create a current backup. Then either: Settings>General>Reset>Erase All Content & Settings or restore it as a "New" device in iTunes. Both accomplish the same thing, erasing all of your data & settings from the phone. You can now give it to your sister, she can plug it into her computer, name it what she wants & sync her content to it. You then restore your 4S from the backup of the 3GS you created when you started. Follow this by syncing your content to your new phone & your 4S will look just like your 3GS.

    The remote lock locks the iphone with a passcode that you set. By remote wiping the device it will simply restore it and clear it of all its data, but by doing this it will prevent you tracking it and communicating with it (e.g. remote locking it) in the future

    what you need to do is do a backup. then download and install the update, then allow it to restore from backup. You'll lose nothing that way. Don't do a backup then you do run the risk of losing data.
