Backups are incremental. You cannot select a set date. In addition, you cannot select to restore only notes. You must restore everything.

What different Apple ID? Yours? Your friends? Your dogs... ? I think we are going to need more information. You're probably best setting up the phone as a new phone and restoring from iCloud later on.

The only way to recover the data for a deleted app would be to restore from a backup made before you deleted the app. Apps and their data are integral to eachother, so deleting one deletes the other.
If you have a backup, you could restore from that to restore an App's data, but a restore is also an all or nothing option - the restore will restore everything to the state of the backup, not single or selective items.
Other than that, there is no way to acheive what you wish - if you delete the app you delete its data.

My computer broke down a long time ago and I lost all my music, the only place I have any of it now is on my iPhone. None of my songs were purchases. Some of the songs I have on there, I can't get back if I delete now, not anywhere. Why is there not a simple, built in way to back up music??? This has been driving me insane forever, I really just want to get my music back into iTunes again, or get it onto the computer I'm currently using, somewhere, anywhere, at this point. Is there any way to do this without downloading some program that you have to pay for to get to work?

Do you use iCloud?
What kind of calendars? iPhone calendar or from a service like Google or Exchange?
It is possible you have more than one backup.
Check in iTunes:
Mac: iTunes > Preferences (COMMAND+,) > Devices
PC: Edit > Preferences (CTRL+,) > Devices

Did you try browsing your backups in the Finder ? That is, do not go and "Enter Time Machine". Instead, navigate to your Time Machine backup via Finder and then manually go to the time period (by folder name) you are looking for ... when you find your Aperture library you can then "Show Package Contents" and find the Master you are looking for.

You can choose from up to three of the most recent backups associated with your iCloud account. Each backup shows the date and time the backup was created, as well as the name of the device that created the backup. Unless you want to restore an older backup, choose the most recent backup of the device you want to restore.

I have lost all data on my iphone by mistake. I needed to restore the phone and I didnt realize my back-up was 1yr old, and now the phone is restored and I've got a year old contact list and iMessage chat history. Luckily my iMessage on the Mac is still valid and has all the chat history. My question is how can I restore iMessage chats on my iPhone 4 from my Mac? I have all the chat history on my Mac, but there seems to be no sync function from Mac to iphone. Please advice.

If things seem to be going haywire with your phone, it seems that it MAY be a software issue.
Now, that being said, that does not necessarily mean that it is a virus. Software issues do happen sometimes. It is probably just coincidence.
What you need to do is restore the device using iTunes. This will fix any software issues. After you have done this, you can restore from an iCloud backup.
iCloud does not back up the actual software, so no, the "virus" would not have gotten into the backups.

If you've previously synced the pictures to a computer (as is generally advised to archive them), then they are gone, unless you have backed up the device to itunes or icloud. If so, you need to perform a restore:

You can do this a couple ways. If you are using MobileMe, notes is one of the options for synchronization and that would be automatic. Another way is to backup your iphone to iTunes, this backs up essentially all the information on your phone (except for music) and if you restore the other iphone to the image of the original your notes will be transfered.

If you included the iPhone backup folder into your computer backup routine, you could be able to restore the backup from that point of time and your contact info will be there again.
