All of your apps and media should be in iTunes on your computer.
If they are, plug the phone in and sync what you want to the device.
If they are not, you can redownload Apps from the app store at no charge.
Also, if you have a backup of your old device, you could restore that to the new device and it will put everything back.
You do sync your device with your computer regularly, correct?????

Well, you sink everything on your 3GS onto your laptop/computer. Then you reset your iPhone 4. When you are restarting it, add all those apps music (ect) On to it. It seems difucult but for more info call Apple. I did that and he lead me step by step on how to do it. Well hope this helped~~

Restore the device from the backup created.
If no backup exists, there is nothing to recover.

Your notes should be stored in your backup, so if you have backed up the iPad and that backup does contain those notes that you deleted, you can try restoring from your backup. If you haven't backed up the iPad since you created those notes, they are gone.
If you backup with iCloud only, restoring from backup involves erasing the device and then going through the setup all over again and finally restoring from the iCloud backup. This article explains the process quite clearly.

If you backup with iTunes, connect the iPad to your computer, launch iTunes and right click on the device name on the left and select - Restore from Backup. If you no longer have the phone or have any Backup of it at all, you can re-download your apps and your content from the iTunes Store by logging into your Apple ID at settings> iTunes & App Store. Unfortunately you can no longer recover the data that was associated with those apps.
So far as your photos go, you can recover any photos that were in photo stream and taken less than 30 days ago by logging in with your Apple ID to settings> iCloud> photos. Unfortunately you will be unable to recover any photos from your camera roll.

As Lawrence Finch suggests you can recover more recent information if you have a more recent iCloud backup.
To avoid this problem in the future you should check the iTunes settings when your phone is connected. Make sure iTunes is not set to sync automatically when your iPhone is connected. Another step to take is to give your new iPhone a unique name that is different from your old iPhone. Finally, the best way to charge an iPhone is to use the charger that came with the iPhone and plug that into a good wall outlet.

Had you never backed up the phone before? When you saw the iTunes logo and cable, the device was in recovery mode. The data was already lost. The only way to recover from that is to restore the device, which will delete all of your data. You will only be able to restore to your last backup, whenever that was. Sorry this happened, but this highlights the importance of doing regular backups. The backup is the only protection you have against a problem like this.

Reading some older threads from 2012 and 2011 it appears the problem was present even then. Part of the problem was due to people using multiple or different account id's on the various devices. In my case, I only have one ID and it is the same on all devices yet the iPhone and iPad are still throwing the same error when I try turning on iTunes Match. If you resintall iTunes, it should fix the issue. The following document will go over how to remove iTunes fully and then reinstall. Depending on what version of Windows you're running you'll either follow the directions here:

Right click in windows. Control click on Mac. On the phone in iTunes. Choose "transfer purchases"
