Do as the manual says and restore the ipod.

the only thing on my head you could do is backup your iPod while its on showing the lock screen plugged into iTunes, then restore it from the backup and later once it's up, it should ask you to add a passcode in.

I havent touched my Iphone 4s in ages (about a month). I came back to it the other day. I forgot the password, so naturally it disabled it and is telling me to connect to iTunes. In the meantime, i had got a new computer and didnt back up the itunes files (because im an idiot). You have to place the iPod in Recovery Mode and restore via iTunes. This will erase the iPod. You can restoire from backup to get back to when the backup was made.
