Based in Spain..itunes have my spanish bank account registered so I cannot buy off the UK itunes site. If I buy a UK gift card, can I redeem it , or will Itunes still pick up a Spanish ip address ?
You will need to be in the UK with a valid UK billing address to be able to use a UK gift card.
All the iTunes stores state that you need to be within in the country to use it e.g. for the UK store :

I was initially in the UK apps store and i switched to the USA apps store with a $15 itunes gift card because my credit card from the UK expired..since the switch i couldn't find my previous purchases in the UK store,, now i'm back in the UK and want to switch back using a £15 itunes gift card but whenever i try to switch, itunes tells me i still have credit on my existing US gift card, meanwhile i only have $0.22 which can't buy anything at the apps store..how dow i clear up the balance and switch to the UK apps store...HELP!!!
You might just have to contact Apple and ask them to remove it (losing it). Usually people clear a balance by buying one song and having the exact remainder charged to their credit card, but if you don't have a US credit card you cannot do that.

No, once you redeem a card to your account, it is permanently there, until you spend the amount you have redeemed.

GeoWhen an iTunes card is redeemed, the entire value of the card is placed on the iTunes account. It is a one time use thing. So, there is not a remaining balance on the card.

I have a $75 gift card that says "Apple Store," I was wondering if it will work in the itunes store. Since I don't buy a lot from the itunes store I don't want to try to redeem it then have all that money sitting on my account that I may not use for years.

An Apple Store gift card can only be used to buy at an Apple Store, not in iTunes Store. If the card comes with a key, you can try redeeming it in the iTunes Store in case it is an iTunes gift card.
