I had to reset my Iphone 3G to factory settings yesterday, how do I retrieve lost apps and email?

I backed up to my MacPro and synced my Iphone but somehow when I was syncing and ITunes popped up, it froze my Iphone and I had to restore to factory settings just to get my Iphone to work again.
how can I get my lost emails back and also apps I paid for, as for some reason it is showing what my Iphone looked like back in 2011 in terms of what contacts, apps, photos and emails I had. It also only shows text messages from back in 2011. I need those text messages back.

Without connecting your phone, open iTunes on your computer and go to preferences. On the Devices tab is a list of your available backups. Unless a newer one is listed your can't get you information back. If a newer backup is listed, do the following:
Without connecting your phone, open iTunes on your computer and go to Preferences. On the Devices tab check "Prevent...from syncing automatically".
Connect your phone to your computer, right-click on the name of your phone when it appears in iTunes on the left sidebar and select Restore from Backup, choose your most recent backup to restore from.
When complete, you can go back to iTunes>Preferences>Devices and re-enable automatic syncing.
Your apps should be in your iTunes library and can be synced back to your phone. If they aren't, redownload them in iTunes for free (see http://support.apple.com/kb/HT2519) and sync them back to your phone.

Turn off iMessage, FaceTime & delete the iCloud account. Then: Settings>General>reset>Erase All Content & Settings. Then give it to your friend.

Connect your USB cable to your computer but not to the iPhone, iPad, or iPod touch until step 3.

When the device turns off, release the Sleep/Wake and Home buttons.

In trying to include what information all that I could I should have specified I DON'T KNOW THAT IT WAS DEFINATELY JAILBROKEN when I took it to the apple store they told me there's no way for them to tell if it was jail broken or not. I'm only going by what ppl have told me COULD HAVE BEEN DONE TO THE PHONE. With that said the only thing I know for sure is that the apple tech at the Genius Bar told me that someone took control of my root menu in February & I've had no control of my phone since. I asked him how to regain control & how he knew his exact words were "oh that is out of our scope of capabilities here at this level & you would need an apple engineer to fix it". I said ok then how do I get an apple eng then? He laughed & said you can't!!!! To which I was furious I came home & called apple requesting to speak w/the fraud dept to file a report they said we don't have a fraud dept!! So after a 45 mn phone call again I left w/no answers.

I DON'T HAVE THOUSANDS OF DOLLARS TO SPEND HIRING AN ATTORNEY & Although I appreciate your suggestion I fail to how an attorney would be able to facilitate in any way since there's no suspect. I cannot prove that it's him doing it so I certainly can't pursue legal action w/no proof & no money. :'((

I was looking more for a TECHNICAL way to avoid this happening w/a new phone should I buy one or trying to get them out of my phone now! Such as installing some kind of software protection?? It is STILL not detecting ANY wifi networks. HELP!!! I cannot afford to go over my data and I use wifi at home and work... I believe the updates have caused the issue, because it was working fine before the second update released (I hadn't put the first one one until I noticed it had stopped working, and by then the second IOS8 version had came out). They need to do a third update to fix this issue.

If it's grayed out:
Reset Network Settings - if that doesn't fix it, then Backup and Restore AS A NEW DEVICE.
If it's still grayed out, unfortunately that means your Wi-Fi antenna quit, and it needs service.

Is there a special reason to do it with iTunes? You can do it on the phone by going to Settings/General/Reset - Erase all content and settings.
To do it using iTunes connect the phone to your computer using a USB port directly on the computer, not a USB hub. Click on its name in iTunes, then click Restore iPhone. When the Restore finishes choose to set up as a new device.
Note that for either method you will have to disable Find my iPhone first, either in Settings/icloud on the phone or by logging in to https://icloud.com/find.

iTunes doesn't just restore a phone to factory settings all by itself. You must have selected the incorrect button.
In any case, if there was a previous backup of your phone, you can restore your phone from this backup. Any new data you added to your phone since this backup is gone.
If you have no backup, then your data is gone.
