You can follow the instructions in the page you linked from: http://support.apple.com/kb/HT2109 to transfer everything from your old phone to your new one. If you only want to transfer contacts and you still have your old phone (or if the contacts are already on your computer) you could sync the contacts as described in: http://support.apple.com/kb/PH12317
Also, if you still have the old phone you could sync them via iCloud without using a computer: http://www.apple.com/icloud/setup/

    If I wiped my phone I wouldn't have the contacts on my phone to send to my self.    I would need to take just the contacts from my back up. I would have to do this through iTunes and I don't see how I can just extract the contacts only from my back up. From what I can figure out it is all or nothing

    You can't store anything on an iPhone SIM.  If your contacts are in iCloud, just go to Settings>iCloud on your phone, sign into your account and turn Contacts on.  They will then download to your phone.

    In iTunes, did you click your  iPhone under "devices" then go through the tabs to set things up?  There's one setting that you need to check to sync contacts.

    Keep the old OS around and just kick the tires and test new OS. Apple has a history and habit of breaking support in things like this.
    You can use TimeMachine as one level of backup, and even there there were changes with Lion, I would always recommend foremost backup clones of every volume. And clone (SuperDuper etc) can be stored on something like HP NAS Media Server which also was supporting TimeMachine, iTunes - until Apple made that harder and more their own proprietary format.

    Rather than "upgrade" I would clone the system, and do a clean install, then allow Setup Assistant to import your files.

    Using iTunes to transfer contacts from iPhone 3GS to Samsung as follows.
    You should have a Google account and you should be manually backing up your iPhone to your computer via using iTunes. Here’s what you need to do to transfer and sync iPhone contacts to android.
    1.open your iTunes and plug in the iPhone to your computer with a USB cable.
    2.Select your iPhone in iTunes. Go to the ‘Info’ tab, slect Sync Contacts with Google Contacts.
    3.You will be asked for your Gmail username and password. Enter the username and password and wait for it to sync.
    4.When it finishes go to Gmail and log in. Go to Gmail -> Contacts and you will find your iPhone contacts there.
    5.Restore Contacts on Android. Go to Menu -> Settings- > Accounts -> Sync. Tap on Add Account and select Google.
    6.tap on Sign in and enter the Gmail account username and password you used previously
    7.Wait for sometime for the communications to the Google Servers to complete. you will be given options on what you want to sync. Tick ‘Sync Contacts’ and then tap on Finish.
    And you can also try this way to transfer iPhone messages to Samsung.

    I think I am following -- I was able to upload to my iPhoto and all photos and videos are there that is a plus! I tried to create an Event in my iPhoto and put all of my photos in that event but for some reason, now my iTunes it not recognizing that Event in my iPhoto. It is not allowing me to import just that event at the moment but I may be doing something wrong. At least all of my pics and vids are in iPhoto so that is a plus and I know they are at least saved somewhere. Just for some reason, my iTunes it not locating the event that I created with only those photos.

    Also, I had no clue that my iCloud could be backed up via cellular data! However, is this a new feature with the most updated iOS?? Unforutnatly I am like 2 iOS updates behind because I don't have enough storage on my phone.     Make a backup of your old iPAd to itunes or iCloud.
    Then restore from that backup when setting up the new iPad Air.
    The restore will put your data onto the new iPad.  (The Os will remain at 7).
    Folder structure is a little iffy. Since backups don't restore Apps, only data, you would still need to re-download the Apps to the new Air and as such would need to create the folders for them.

    What do you mean by "Siri taking over my phone and locking me out of accessing it"?  Are you sure you don't have VoiceOver turned on?  With VoiceOver on a voice speaks the names of items that you touch on the screen, and you have to use different gestures to get around.  This may make it feel like you're "locked out" of your phone.
    To turn VoiceOver off you have to go to Settings>General>Accessibility>VoiceOver>Off.  With VoiceOver on you have to flick the screen with three fingers to scroll, and to activate an item on the screen you have to tap an item once to select it, then double-tap it to activate it.  You can also turn it off by connecting your phone to iTunes, go to the Summary tab of your iTunes sync settings, Click Configure Universal Access (under Options), then under Seeing select Neither.
