I have three charges on my credit card from apple, same day and same amount.  How do I find out what these are for?

You should receive an email receipt for any purchase (though it may not appear immediately, mine sometimes appear the following day).
You've checked the purchase history on your account (Store > View My Account, Store > View My Apple ID on iTunes 11, menu option on your computer's iTunes), and have you made any in-app purchases ? If not and you haven't added or changed your credit card details (when you do then a small temporary store holding charge may be applied to check that the details are correct and valid, which should disappear within a few days) then you could contact iTunes Support and ask if they can help : http://www.apple.com/support/itunes/contact/ - click on Contact iTunes Store Support on the right-hand side of the page, then Purchases, Billing & Redemption

    There's no way to find that. You can simply deauthorize all computer then authorize the ones you use.

    then To authorize a computer using your Apple ID.

    You haven't got any auto-renewing subscriptions (I'm not sure if they show on the purchase history or not, I don't have any so I can't check) - there are instructions on this page for managing and stopping them : http://support.apple.com/kb/HT4098

    You can view an account's purchase history via your computer's iTunes : log into an account on your computer's iTunes via the Store > View Account menu option, and you should then see a Purchase History section with a 'see all' link to the right of it. Click on that and you should then see a list of your purchases.
    Or you can view the last 90 days purchases on an account, and optionally contact iTunes Support if there is a problem with one of them, via http://reportaproblem.apple.com
    There isn't a site/place where you can type in order numbers.

    If you mean which computers that your account is authorised on then you can't, you can only see the count.
    Have you had other computers in the past and/or updated or reinstalled the OS on your current computers without deauthorising them ?
    As you have 5 computers authorised then you can log into your account on a computer's iTunes via the Store > View Account menu option and 'deauthorise all' (which you can do once every 12 months) and you can then authorise/reauthorise the computers that you still have and need : authorising and deauthorising.

    I don't know what you're basing the 'every three hours' thing on, but if you're looking at the bill from your carrier, remember that data usage is not reported in real time. It's reported in batches. It's more likely that the data usage is being 'reported' every three hours.
    Look in Settings>Cellular. You can see how much data each app has used and control what's allowed to use cellular data and what's not.
