How do I remove my e mail from sons I pad?

I don't think it will delete from other devices. Make a note of the settings first, so if it does, you can add it back again on the device where you want it!! Although that's pretty much done automatically.
I have an old iPad1 with multi-email accounts, but it's not iOS6.... on that you can select the account (in settings / email) and just switch off the accounts you don't want to pick up on that device.... not sure if you can do that in iOS6.
As to giving your son his own Apple ID.... well, as a parent myself, I'm sure you'll want to share an account to save buying the same thing multiple times. We have about 10 computers/devices all sharing one account, and by playng with the settings on each one, we are not having too many issues.

    You can deactivate an email account in Settings > Mail, Contacts, Calendars > the account > Account. Turn it OFF.

    Try Mail>Preferences>Accounts icon>Account Information tab>Click on the Outgoing SMTP server drop down, choose edit Server list, highlight the old one & click Remove.
    (Such convolution is worthy of Windows® in my estimation)

    Perhaps I don't understand your question.  Above you mention "i mail"; I'm assuming you meant "iMessage".  If that is want you meant, then have you turned iMessage to On in Settings>Messages?  And if so, does it say anything just below the iMessage On/Off button (such as "waiting for activation")?

    Reset your iPad.  Hold the on/off and home buttons together for about 10 seconds till the Apple logo appears.

    Go to settings -> mail contacts and calendars -> tap on the desired account and choose delete at the bottom of the page. This will delete the email accunt from the device.

    I see that you wish to get rid of the Junk Mail folder from your sidebar in Mail on OS X. I have an article for you that will explain how to do this:

    You're welcome.
    If that email address is your Apple ID, I don't believe you can delete it.
    If you have your cell phone number selected as your Caller ID, when sending an iMessage it will be sent from your phone number.
    Since your Apple ID email address is registered as well, if someone has your email address in their contacts, they can select your email address to send you an iMessage in addition to your phone number.
    When this recipient says you are sometimes sending an iMessage via email, it is received as an email with the Mail app on their iPhone, not with the Messages app?

    I need to remove my mail program and reinstall it -- or even completely refresh my iPhone/iPad.  I keep hoping Apple will fix the problem but 7.1.2 still hasn't fixed it.
    How do I remove and reinstall Mail (or -- at the worst -- refresh the entire iOS device (using backups from iCloud for important settings)?

    RAM in an iPad/iPhone is like the RAM in your computer. It's used to run the operating system and open apps.

    I don't think you can remove your email.  If you are concerned about privacy make sure you have it set so that you are the only one who can view it. You do this under the privacy settings under Your Stuff - Profile  " If you want to change your email you can go here to make changes.

    If you don't want to keep it, select it, on the iCloud website Mail page click the Trash icon in the toolbar to move it to the Trash, then click the cogwheel icon at top right and choose 'Empty Trash'. Or in the Mail application drag the messages to the Trash and from the Mailbox menu choose 'Erase deleted items' then 'iCloud'.
    If you want to keep it, in the Mail application drag the messages to another mailbox under 'On My Mac'.
