You can't delete either the account or the email address. If you are getting messages to it you don't want to see, go to http://icloud.com and to the Mail page: click on the cogwheel icon at bottom left and choose 'Rules'. Then set up a Rule to move all messages to your address to the Trash.

To disconnect a device from an icloud account:
Settings>icloud, scroll to bottom of screen and tap Delete Account. Then sign in with another one.
If you haven't created a different ID for icloud...

You can add up to three 'email aliases' - these are additional addresses (not accounts) which deliver into the same inbox as the main account. (In fact it's a good idea to give out alias addresses, rather than the main address, because if they attract spam you can easily change them.) (New aliases can only be @icloud.com ones; @me.com addresses cannot now be created.)
You should be aware before you start that once you've created an alias you cannot turn that address into a full iCloud account or move it to another account.

the latest iOS needs an Apple ID which is active for one to operate the phone. are you thinking of replacing the @icloud email with another one?

You can't. You automatically get the same address @icloud.com as you chose for @me.com.
You can either setup an alias with your desired address (if available), or create a whole new iCloud account attached to a new AppleID.

You can't change an iCloud (@mac, @me or @icloud) email address without creating a new account. You can, however, create an email alias with the correct spelling and use that. You can't change an iCloud email address. You can create an alias address to use that will receive email in your current iCloud inbox, but it will still be an @icloud.com address. though I have to say I think it's more sensible if the ID is another address, both for security reasons (so people don't know what the login is) and as a contact address from Apple if the account were to stop working and they needed to contact you. So personally I would to to System Preferences, enter the GMail address which is an ID, and then choose a nerw @icloud.com address.
If she has her own iCloud account she will need either her own computer or her own user account on your Mac to be able to make use of it. You should note that under Apple's terms of use Apple IDs are only available to children of 13 and over.
As to purchasing apps, this is nothing to do with iCloud: it's iTunes, and the login can be different. So you can all sign into the same iTunes account but have different iCloud accounts. Or she can have her own iTunes account if she is of suitable age (credit card needed for purchasing apps).
If you have other children you should be aware that any one Mac or device can create only three iCloud accounts - this is tied to the serial number, not the user account, and once reached cannot be bypassed. You can of course sign into an iCloud account created on another device.

Your iCloud and @icloud.com login ID is an Apple ID. Go to http://appleid.apple.com and sign in with the ID you use to sign into iCloud (you can check this by going to http://www.icloud.com and signing in there).
Click 'Password & Security' in the sidebar and you will be able to change the password.
HOWEVER
Before you do this you must turn off 'Find My iPhone/iPad/iMac' if you have it enabled on any of your devices, otherwise you will land yourself in difficulties.
