Double click the home button to bring up the multitask bar, hold one app icon until they all start to shake, hit the little minus icon to close the app. Click on the home button to get back to the home screen again.
In most of the cases deleting the mail account and setting it up again can cure the battery drain. There have been cases in which the mail app got stuck trying to connect to the server over and over again, causing the drain.

They changed it a bit, but you can still close apps. Double click the Home button to pull up the currently running apps. Side scroll over to the app you want to close, then swipe up on the app *window* (not the icon at the bottom). Now most of the time, unless the app is stuck and running crazy, it shouldn't hurt your battery too much to have apps open; the OS is smart enough to only allocate resources to the active apps.

You can't close or delete accounts (you can only remove any personal info from them and stop using them), and you can't merge accounts or transfer purchases to another account - content will remain tied to the account that downloaded them.
