You can't, not without the correct ID and password. If your friend doesn't know the ID, you he/she try to find it as explained here: http://support.apple.com/kb/HT5625. If he/she doesn't know his/her password he/she can reset the password as explained here: http://support.apple.com/kb/PH2617.

- iOS: Not responding or does not turn on
- Also try DFU mode after try recovery mode

You'd have to think through this, but it seems like if you are using Outlook, and the items vanished from the Outlook client as well as the server,that you could re-populate Outlook using iTunes.

Is the phone running iOS 7? If so, then you would need to know the Apple/iCloud ID and password of the previous owner in order to remove the iCloud account from the phone.
If you don't know the ID and password, then you should return the phone for a refund.
